I find you don't really have to mix at all. Just season your meat portions well, rolling them into a ball somewhat aggressively (push the meat around a bit before you ball it) works very well. Over handling the ground beef is a rookie mistake. Also place the raw beef on the grill, then tortilla and smash it. Better sear this way
Mine were good AF. It's something missing with those. Maybe the homemade big Mac sauce and the grease from the pain and meat. It makes them taste way better.

Season the meat first - mix well - then roll into a ball, then press onto the tortilla. Press the chopped onions onto the meat then fry.
