The Breville Razor trimming tool is a dosing control tool that Breville came up with to make the lives of beginner baristas easier. Problem is, it can do more harm than good. In this weeks review, we look at the Razor Tool, and show you exactly why you shouldn't be using it, and what you should be using for dosing and tamping instead!

The Razor is perfect for prying the basket out of the portafilter when cleaning or swapping to a different size. It's much easier than trying to use your fingers.

Thanks to this video! The Razor was the problem for me. I was trying to prepare a one-cup espresso with the Razor. However, the Razor trimmed the coffee dose in one cup filter basket too much so that the pointer never went in the Espresson Range. Then I stopped using the Razor and just tamped it with pressure after watching this video. Finally, the pointer went in the Espresso Range.

I found a great use for it, believe it or not, lol!
After tamping, I'm sometimes left with coffee grounds sticking to the sides of the basket. Rotating the razor on the basket's wall while holing the portafilter at an angle against the knock box gets rid of them completely, leaving me with cleaner looking basket haha.
However, after using a 53.3mm tamper, I no longer needed it, always cleaner baskets with the 53.3mm tamper.

Interesting. I use a paper clip to break up any clumps, tamp, use the razor tool and then lightly set the tamp over the puck and give it a few spins. It smooths out the “disturbed” puck and all my shots are consistent in taste and time of extraction (between 25 - 30 seconds).

  • @munkybiz9562

I use it only to gauge the minimum depth of my distribution/tamper tool. Otherwise, it’s useless just as you mentioned. In addition to the coarseness/fineness of the grounds, the roasting level can also vary the *volume* of the grounds in comparison to its mass, thus rendering the “razor” ineffectual.

Think you are missing the point.
I use it occasionally to aid dialling in.
Not to scrape off a layer of coffee but to check the death after tamping as that's the death recommended for the higher than normal shower screen of the breville or sage.
I then adjust Grind and coffee weight in to my single dose niche zero grinder to get 2:1 out:in in the magicalc 30 seconds.
Use in mainly when I try a different or new to me coffee beans.or a different vst basket size. Currently using 25g in to a vst 22g which was my ideal after dialling in with the aid of the thing I did not throw away!

The Gaggia Classic pro is a great step up in terms of espresso quality: czcams.com/video/ki2Tzjh8dV0/video.html
If you want a BIG step up, look into options like the Rocket Appartamento, Profitec Pro 300, or Lelit Bianca to name a few
REMEMBER, grinder quality is a VERY big contributor to overall espresso quality. A Gaggia with a great grinder will produce better espresso than a Rocket with an okay grinder

More people need to see this, I never understood why the razor was included. It doesn't really level well, and it just removes way way too much espresso from the portafilter where generally you have an underdosed shot and it does this by removing way too much depth of the puck, I generally have my puck sitting much higher

I have the Breville dual boiler and smart grinder pro. I use a 22g single dose which I have dialed in for correct grind size to give me exactly 9 bar extraction. The biggest variable for me is my tamping pressure which the Razor helps with. I also waste NO, NADA, ZERO coffee! Here is my workflow: 1. Add 22g beans to Hopper. 2. From initial setting of 25 seconds, grind until 8 seconds remain. 3. Pause grinder and give very light tamp. 4. Finish grind (make sure grind chamber is empty) and give full tamp. 5. Use Razor to check level and swirl to level and clean off sides of basket. 6. Add stray grounds from grinder tray. 7. Re-tamp for smooth, even puck. 8. Extract perfect, repeatable shot every time!

  • @marcobaresi821

As a barista I will always recommend a scale, but the razor is the perfect tool for the ones not as geeky as us. I have a couple of remarks:
    -Why should you tamp differently?
-Different grind settings gives you different quantity in the basket (obviously) but the most important this is that the distance between puck and shower screen; why you don't just adjust the yield to maintain the ratio?
thanks in advance for your answer

Actually you should keep it but not use it in quite the way that is show here.
The razor gives you a standard volume. The way I use it is to scrape and discard until there is a the amount of 'extra' running over the standard flat surface in front of the blades that I want. If the result is a bit over-extracted I reduce the extra next time. If it under extracted I increase the extra. Using this system you can fine tune your extraction for different beans at different grind sizes.

  • @itsm3th3b33
    @itsm3th3b33 Před 3 lety +2

    This is wrong.
The purpose of the razor is not to shave off and discard extra coffee.
The purpose is as a depth measuring tool. You tamp the puck and measure with the razor before attaching the portafilter. That’s exactly to prevent coffee contact with the curtain. If the razor is able to shave, then you redistribute and tamp it harder. You don’t discard “extra coffee”.
Obviously, redistributing is a lot easier with that redistributing tool, if you have one. They are not cheap though.

When clients come to my coffee shop and « want the best but don’t want to spend 45min every morning making coffee » all my body is crying inside. Breville is a waste of money and time, nothing good comes out of it, and this razor sums up their mindset pretty well : amateurs.

If that was intended to be a serious comment from a 'professional ' then you failed pal. '45 minutes' - to do what? As for the razor, the guy presenting this video clearly either didn't tamp the basket before using the razor (as per brevilles instruction) or way overfilled the basket, because you simply do not stir up as much coffee as he did if you use it properly. The razor is to help the 'amateur' as you so condescendingly referred to them, ensure the basket is levelled off to even water flow. So quit the ignorant snobbery and smart ass comments.
