  • Only 1 EGG: Japanese souffle cheesecake: jiggly fluffy
    INGREDIENTS:
    hot water
    50g cream cheese
    17g unsalted butter
    38g milk
    1 egg yolk
    18g all purpose flour
    1 egg white
    1 TBSP + 1 teaspoon sugar
    10-12cm mold (or small flat-bottomed bowl)
    Preheat oven to 120°C (~248°F)
    bake 120°C (~248°F) for 60 minutes
    turn broiler on 160°C (~320°F) for 5-10 minutes (or until light golden)
    in the oven for 20 minutes

    Question: when you added the white egg to the mixture, the mixture was at room temperature or "hot" ? Thank u

      Thanks for your comment. It would be better if the cheese mixture is still slightly warm (not hot). Room temperature is also ok. Please don't let it cool or cold. Otherwise, when mixed with egg white, the air bubbles will become large and that will spoil the cake. Hope this helps!

    What's the purpose of boiler function?
    Can i steam the cake instead or using air fryer?

      Hi Eliza, thanks for your comment. In my experience, using a broiler will make the top of the cake evenly golden. Actually I've never steamed cheesecake so I'm not sure of it. You can try, just make sure not to let water get into the cake. Hope this helps :)

      I'm not sure. You can find another fluffy sponge cake recipes using oil instead of butter. Good Luck!
