Lebanese Garlic Sauce - easy recipe & vegan Toum

  • Lebanese Garlic Sauce - authentic Toum (vegan) 🧄
    (Makes 500g)
    What is toum? According to Wikipedia, salsat Toum or toumya is a garlic 🧄 sauce commonly used in the Levant area of the Middle East (Lebanon, Syria, Palestine, Jordan & Iraq).
    A highly potent 🚫 garlic sauce, which is similar to the Spanish 🇪🇸Alioli, & its great for keeping the vampires away 🧛🏻‍♀️🧛🏻🧛🏻‍♂️ It’s great with grilled or roasted chicken or veggies.
    This is a vegan version with no egg whites 🥚 used & inspired by @ - very grateful for showing this process as you can either use citric acid crystals or lemon juice 🍋. It is less risky for using citric acid, so it’s not a runny garlic sauce. Great for beginners!
    You need:
    180-200g fat garlic 🧄 cloves, peeled
    500-700ml sunflower oil 🛢
    2 tsp table salt 🧂
    1 tbsp citric acid crystals or 60ml lemon 🍋 juice
    Approx.20 ice cubes in small bowl
    ‼️Important - only use a food processor otherwise you will not get speed to provide air to garlic sauce‼️
    🧄In food processor, add garlic, salt & citric acid & start at standard speed. Total time to make garlic sauce is approx. 10 mins.
    🧄After 1 min processing, scrap down sides in bowl using spoon or spatula. Place lid back on & start processor again.
    🧄Using opening of processor, slowly add oil as stream/drizzle.
    🧄After 2 mins, add 2 or 3 ice cubes. This helps keep sauce cool as motor in processor gets hot! 🔥
    🧄As processor running, return slowly adding oil, after 1 min, check temperature of bowl with hand. If warm, add ice cubes, back to slowly adding oil.
    🧄Continue this process until happy with consistency & thickness of garlic sauce. You do not need to add all 700ml oil, we used 600ml.
    🧄Using a tsp, check consistency & thickness, you can continue using processor without adding oil, just to add more air & smoothness.
    🧄Transfer to glass airtight container & can keep up to a month. Enjoy!
