Our old one only made two at a time, this one makes four! Nicely sized 1 inch thick which are lovely! Now the kids don't have to wait as long to eat our weekly waffle breakfast and everyone's are hot if we wait and eat all together! Setting 3 seems to work perfect for golden brown. Be sure to pour the batter in the center of each waffle square, not the center of the iron like the novice that posted the scorched waffles photo. About a 1/4 to 1/3 cup of batter in each seemed to work well for us. We tested making just one at a time so we could use all the remaining batter and it made it just as fluffy and golden as when we made 4!

These looked so good, but I have learned my lesson with keto desserts. They send me down a dark path that is hard to come back from (over-eating keto desserts). I tend to stick to me savory meals, but this does look damn good!!!
One of my favorite pre-keto desserts was a Hostess Cupcake. This keto version uses no almond flour, which is high in oxalates that bind with magnesium in my body and precipitate torturous cramps in my feet. This recipe makes four multi-mini chaffles if divided evenly between the four wells, and makes a delicious snack when filled with the icing. I added a cup of ice cold "milk', which is ice water with a splash of heavy whipping cream. Thank you, Steve, for sharing KCCat5's recipe!
Right, in my case almond flour makes me have nausea and stomach cramples. So weird. I use coconut of lupin flour instead. Flavor isn't the same, but I'm happy I can have alternatives to cook in keto😊
I tried the second one. It was great! I made it tonight and I was too lazy to get out the waffle iron, so I zapped it 90 seconds and made a mug cake. Yummy cupcake texture!

And "Spoonbread & Strawberry Wine is the history, thru food, of one African American family. And Fanny Farmers Cooking School Cookbook is a deep dive in cooking knowledge & lore. ANYway, I sometimes watch your videos w/a somewhat similar attitude. I do some of my own variations of these. Because I don't like eggy taste I use egg whites. I do one with powdered milk that tastes just like white bread. The possibilities are endless. Thank you for sharing. Will try both recipes soon!
This was soooo good. It really hit the sweet tooth spot! I added a little Sweet drops english toffee stevia drops to the frosting. OMG delicious! Thanks for the recipe Steve and KCCat5.
It does have cheese! Cream cheese is a soft CHEESE. For those who can’t have cream cheese you can take Greek unflavored yogurt and salt it put in strainer with cheese cloth and set aside 24 hours. It will thicken like cream cheese and taste like cream cheese or sour cream.
I just made the easier recipe tonight and it was fantastic! I shared pictures and details with a keto oriented group I'm part of and they all drooled over it and swore to make their own.
Did the second version. Once cooled and assembled, tasted bitter with chocolate. Not edible. Doubles the recipe. Cut cocoa in half and made it a blend of black and regular cocoa. Added extra tbsp of sweetener and 1tsp coconut flour. Made it in mini Bundt maker (cooks at lower temp, but for longer, about 8 minutes). Was a little batter left over. Came out like a dream.

I'd think this cream cheese icing has to be way better. Cool whip tastes just like shaving cream. Love redi whip, tho...it's real cream, or at least dairy.
I made the second Chaffee. I put 1 teaspoon of homemade vanilla in the batter. I made a frosting with heavy whipping cream , 1 teaspoon vanilla and 1 tblsp of Yacon Syrup. I drizzled some of the Yacon syrup on the waffles with a little butter and topped it with the cream and ate with quarter cup of frozen blueberries.
I'm Glad the chaffle recipe from KCCAT5 worked out well, cause I'm Not gonna spend that much money on black cocoa powder. Thanks for the recipe and thanks for all the research you put into these recipes.
If you live in canada, at the bulk barn, the black cocoa powder costs exactly the same as the regular cocoa powder. The only cocoa powder that costs more was the premium “red” cocoa powder.
If you like chocolate and waffles, you have to try these. These waffles are fantastic. I just made them. Without icing. They are delicious. They are soft. They are chocolatey. I'm going to use these as a base to try and make other desserts.
The black cocoa arrived. These are truly wonderful. Well worth ordering the special cocoa powder. Go light on the frosting to enjoy the chocolate flavor

However, I did not have any cream cheese on hand for the filling(keto party foul- tomorrow is grocery day), but I did have a bit of ricotta cheese. I made the second one tonight using the mini griddle instead of mini waffle iron. Really enjoyed the texture, but the cake was way too sweet for either of us. Will try again but will cut the sweetness.
I think the griddle would be perfect for making these as ice cream sandwiches. I need to develop a filling that's somewhere between ice cream and frosting that doesn't turn rock hard when frozen (which has been the case with every keto ice cream recipe I've tried).

I made the second one. My batter seemed really thin. The first one that I poured a whole bunch of it came out the side lol. Oops I used cacao. Next time I think I'll use a little less sweetener. I guess because I don't eat sweets anymore it was a bit overpowering. It was really good though. I ate it all lol.
Added 1 ounce cream cheese and another tablespoon sweetener to cupcake chaffle recipe, so it now makes 3. I just couldn't bring myself to make a CHeesewAFFLE without cheese. These make absolutely great cake layers for ice cream (well, Creami) sandwiches! Thanks so much!!

If you like chocolate and waffles, you have to try these. These waffles are fantastic. I just made them. Without icing. They are delicious. They are soft. They are chocolatey. I'm going to use these as a base to try and make other desserts.
The black cocoa arrived. These are truly wonderful. Well worth ordering the special cocoa powder. Go light on the frosting to enjoy the chocolate flavor
I would love a video comparing dairy free chaffle recipes, for the dairy challenged among us.

I'll put that on my "to do" list, but it could be a while before I get to something like that. Given that I'm from Wisconsin, I kinda find myself having dairy as part of everything.

Tonight, I made the chocolate waffles. So good! Thank you for sharing. However, I did not have any cream cheese on hand for the filling(keto party foul- tomorrow is grocery day), but I did have a bit of ricotta cheese. After mixing in sweetener and tiramisu flavoring, an amazing dessert resulted. Thank you for the inspiration and all the time/effort you put into your videos. It is much appreciated.

I made the second one tonight using the mini griddle instead of mini waffle iron. Really enjoyed the texture, but the cake was way too sweet for either of us. Will try again but will cut the sweetness.
I think the griddle would be perfect for making these as ice cream sandwiches. I need to develop a filling that's somewhere between ice cream and frosting that doesn't turn rock hard when frozen (which has been the case with every keto ice cream recipe I've tried).

My batter seemed really thin. The first one that I poured a whole bunch of it came out the side lol. Oops
I used cacao. Next time I think I'll use a little less sweetener. I guess because I don't eat sweets anymore it was a bit overpowering. It was really good though. I ate it all lol.
I find that over the last several months, my desire for sweets has plummeted too.
Added 1 ounce cream cheese and another tablespoon sweetener to cupcake chaffle recipe, so it now makes 3. I just couldn't bring myself to make a CHeesewAFFLE without cheese. These make absolutely great cake layers for ice cream (well, Creami) sandwiches! Thanks so much!!
I made the Chocolate cupcake ones and they were delicious! I think I might make them with whipped cream the next time I make them. Wonderful treat. My picky husband even liked them!
