Pinapaitan or papaitan is a Filipino Stew made with Goat or Beef internal organs and offal and flavored with its bile chyme, or cud (also known as papait). This papait gives the stew its signature bitter flavor profile or "pait" (lit. "bitter"),a flavor profile commonly associated with Ilocano / Pangasinan cuisine.
Ingredients:
1.5kg of Beef innards
1 big-sized Onion chopped
6 cloves Garlic minced
3 thump-size Ginger julienne
1 tsp Ground Black Pepper
8g granule seasoning
2 tbsp Lemon juice
1 cup Onion leaves sliced
Bile to taste
3 tbsp cooking oil
Fish sauce and Salt to taste
8-10 cup of water
