I was hoping to learn how to do crispy-skin snapper but I was delighted to learn both that and many other prep and cooking methods.

lol I think he got gloriously carried away. Fresh Peas are way better than any frozen or even fresh frozen peas.

@@JasonDias7 you're dead wrong. The truth are no real difference in taste between good fresh/frozen peas

@@JasonDias7 Peas are unique in that sense I think. Frozen peas are great and even Gordon Ramsay would use them.

He mentions "I've got my juice that I am going to reduce and finish with cream", but did not add any cream? Also, were the peas frozen when he added them to the pan, because they were only in there for 50 seconds - from frozen, would still be frozen?

  • @946brandon

Did anyone see where the cream he mentioned went in?

Hot pan on non-stick to pan fried the fish is not ideal. If you want less shrinking on your fish skin and have absolute beauty crust, start with cold pan. slowly bring up the head and put weight on top.

Didn't really explain how to cook the snapper. You want to cook the fillet 90% skin side down and then flip it for a minute. Done
