why is he putting tomato puree after the beer. i thought he always taught people that we suppose to pan roast the puree first before stiring it to get more flavor out

Hi! In this sense is because the beer bubbles and needs to sit and simmer and reduce, once reduced if the broth is thin, you add the tomatoe puree to thicken it afterwards. If you put it in before the beer, it will burn off and be a waste and not really help thicken the broth.
