  • Here’s a super simple and easy way to smoke a pork butt for pulled pork.
    1- Preheat smoker to 210 using your favorite wood. For this smoke I used Apple and Fruitwood.
    2- While you wait for the smoker to come up the temp: 
    Trim off any excess hard fat on your meat.  Hard fat will not render.
    3- rub meat with a light coating of mustard and coat well with kosher salt and your favorite rub. I used Swine Life’s Mississippi grind for this one.
    4- put the meat on the smoker and don’t even look at it for at least eight hours.
    5- at around that eight hour mark insert meat thermometer to start monitoring temps. We want to hit an internal temp between 190 and 200.
    6- at around hour 12 bring your smoker temps up to 225 to 230 for the rest of the duration. 
    Final- once your internal temps start hitting that 190 Mark start feeling for softness. The probe should go in and out of the meat with the feeling of soft butter.
    Pull and eat.
