EASY SUPER SIMPLE LEMON CAKE

  • Cheers to January! Wishing everyone of your the happiest and most encouraging of starts to the new year. I hope life's been especially sweet 🤍. As the hustle of the holidays slows down into every day, I figure it's the best time to practice. It's the perfect pace to hone my craft and master a few skills, which brings me to this beautifully moist lemon polenta cake. I've always told myself I wasn't a cake girlie, but maybe over the years, I've been eating the wrong kinds. So let the experiments begin! Lemon polenta cake: 150g AP Flour, 115g Polenta, 2 tsp B. Powder, 1tsp Salt, 113g butter, 150g Sugar, 3u eggs, 1tsp, Vanilla Extract, 120g milk, 1 1/2u lemon zest. Cream butter. Add Eggs one at a time. Mix dry ingredients in a separate bowl. Add the remaining ingredients alternating the milk and dry mix. Bake 350F for 30 min. Add butter to the warm cake. Drizzle honey. Sprinkle toasted almonds and Maldon salt.
