I’m not sure if Baratza grinders ship with varied calibrations but I just opened a bag of this coffee this morning, went by this exact recipe described here. 18 Grind on my Encore was WAY too coarse for this. The water practically went straight through the coffee. I think it was finished by 1:45-2:00 I then tried 15 Grind setting and even that was still too coarse. Brew finished around 2:15 or so. Both brews also tasted kinda bad second being a bit better. Am I doing something wrong here? (Using Stag XF) but I doubt that’s too big of a difference.

While are differences in calibration the XF is a much taller brewer and can fit more water. Your second pour is likely building up much higher than the same recipe on the X. This will cause a much faster drain time due to increased pressure from the taller water column, I'd recommend pouring a little more slowly. Depending on your water profile, 3rd Wave Water, or harder water, that will also increase your flow rate. Remember, 2:30 is our target time, let your water flow through the bed before hitting again. If you meet those standards, don't be afraid to grind finer, still. That's going to be the easiest way to extend that drain time.

i’m using third wave water mixed with distilled. I poured the same way you called for basically. I will try again today on 13/14. I grabbed a v60 set up too which is coming in the mail soon. So i’ll give that a try this weekend.

@@shauncassidy3658 Just brewed it up today as well and it brewed pretty quick for my grind setting. How has the v60 been?
