  • It’s back! A personal favorite from our roastery, this washed coffee from Ethiopia exhibits one of our favorite profiles. It’s extremely clean and silky in texture, animating complex Earl Grey and bergamot notes. Subtle stone fruit, honeysuckle and cocoa are also present in the flavor of the cup. This is our fourth year to carry coffee from this mill and we are excited about the solace it brings.

    The swirl also grinds the grounds together eroding the irregular edges, decreasing air space between grounds, rationalizing grind consistency, and standardizing the process. The initial divot should be done with a pointed Japanese chopstick ideally colored red.

      Ideal length of stir stick must be 9.75 inches

    Appreciate this guide! Do you recommend same pouring technique for smaller brews (12-15g of coffee), or would you suggest a different technique/brewer ?

    I always appreciate it when multiple grind size references are given. This video only gave one manual grinder size.

      There are so many grinders out there, it can be hard to cover them all. For the Comandante. Each click is 30microns. So, if you have a different hand grinder, you should be able to find how large 1 adjustment is for you and make a comparable grind adjustment.

      @@OnyxCoffeeLab It's closer to the 18-19 range. Here's the math I used:
      Encore is a 250-1200 micron range, and 40 settings. ((1200-250)/40) = 23.75 microns per click.
      We want ~690 micron coffee per this recipe, and the Encore starts at 250 microns on the finest setting, so:
      ((690-250)/23.75) = ~18.5 clicks. So 18-19 is what I went with depending on which got me to the best total drain time.
