All you did was change the display setting to custom and tweaked the sharpness contrast brightness etc my game looked like this on console because I tweaked my display setting

My software doesn't record the screen; it captures the game directly from GPU. Therefore, adjusting my monitor settings won't affect the final video output. Instead, I used Reshade and some texture mods to enhance the game's visuals.

I added the mods about two months ago and I stopped automatic updates to avoid potential issues, the game might not be at the latest version if any updates were released since then.

Hmm, isn't the color the same? I guess you mean the jacket that appears at 01:51:13? If not, it might be from the Why'em DLC, as I used that as well.

Follow the tutorials for the mod you want to install on its Nexus Mods page. Modding RDR2 is quite simple; it mostly involves dragging and dropping files.

Yes, you should be fine with 1440p. The mod list typically uses around 12-18GB of VRAM depending on the location with highest settings in the game, but that's in 4K. In the worst case, if there are stutters due to the lack of VRAM, or the textures are not loading properly, you can disable the Upscaled All-In-One MegaPack mod, which will free up a significant amount of VRAM.

The ground textures are not working in every area; they mainly work in the mission areas. This is why it may seem like they are not working.

You need to compare them side by side; the difference is noticeable. The most notable difference is the colors, which are more vibrant here, and many of the textures have been upscaled. This mod list in 4K consumes 18GB of VRAM in some places :D
