This eye-catching meal will have your family or guests doing a double take when dinner is served and asking for seconds.
Peach Melba Pork Chops

½ of a whole boneless pork loin, approximately 4-5 pounds, 1.8-2.2kg
salt and pepper
Apricot Glaze
18 ounces, 510g, peach or apricot preserves
¼ cup, 57ml, rice wine vinegar
2 tablespoons dijon mustard
salt and black pepper to taste
Combine all ingredients in a medium saucepan and bring to a gentle simmer. Remove from heat. Reheat before serving if desired.

toasted slivered or sliced
almonds
fresh raspberries
fresh snipped chives
Season the pork loin half generously with salt and pepper on both sides. Place loin, fat side up on a cold grill. Light the grill and set the timer for 1 hour and 10 minutes. Heat the grill to between 325°F and 375°F (160-190°C). Grill the pork indirectly, keeping an eye on the temperature. For the last 5 minutes, you can turn the pork fat side down directly over the flame to crisp up the fat if desired. The cook time includes while the grill is heating.
You can roast the pork in the oven if you prefer. Set the loin half, fat side up in a shallow baking pan such as a jellyroll pan or baking sheet, on a cooking rack if you have one, in a cold oven. Turn the oven to 325°F, 160°C, gas mark 3 and set the timer for 1 hour. After the time is up, turn the heat up to 425°F, 220°C, gas mark 7, and set the timer for an additional 15 minutes (no need to wait for it to come to temp). This will crisp up the fat on top.
While the pork is cooking, prepare the mashed potatoes and the apricot glaze and toast the almonds.
Remove the loin from the grill or oven and slice into 1 inch thick slices.
Top slices of pork with a #20 disher (¼ cup) scoop of mashed potatoes, covered with the apricot glaze. Sprinkle fresh raspberries, almonds and chives over top.

The final dish turned out amazing, the flavor had to be wonderful.
Pork with Raspberries , Really I think not , but I know you put them on there for a huge colour pop . Then you added Almonds , with pork and mashed potatoes . 100% NO I personally wouldn’t .
Having said that , Your pork was cooked to perfection , I was tasting to , fantastic peach glaze , with mash yes please , would of added peas and Asparagus. No nuts or Raspberries with pork . Again it did look clean and delicious . So Thank you very much
