Chicken Tikka Masala
It's been a while! We're back with a short, and delicious tikka masala recipe that comes together in about 30 minutes. Use a couple of rotisserie chickens and dinner is ready almost before you are.
Chicken Tikka Masala
4 Tbsp, 60g butter
1 medium onion, diced
3-4 cloves garlic, minced
2 Tbsp, 30ml fresh grated ginger
2 cups, 452ml chicken broth
1 cup, 226ml heavy cream
5.3 ounces, 150g plain yogurt
28 ounces, 795g diced tomatoes in their liquid
3 ounces, 90g tomato paste
3 Tbsp curry powder, hot or mild
2 tsp ground coriander
2 tsp ground cumin
2 tsp smoked paprika
2 tsp kosher salt, or to taste
3 pounds, 1.4kg cooked chicken
fresh chopped parsley or cilantro
cooked rice
naan or flat breads
Heat butter over medium heat in a large heavy pan. Add onions to sweat for 3-4 minutes. Add garlic on top of the onions, but do not stir. Let sit for 1-2 minutes. Stir in garlic, add ginger and tomato paste. Saute for 1-2 minutes. Add spices and combine. Add in tomatoes in their liquid and chicken broth. Stir and simmer for 5-10 minutes. Using an immersion blender, or carefully in batches in a stand blender, blend until smooth. Add yogurt and cream and stir. Carefully fold in diced chicken and heat for 3-4 minutes or until completely heated through. Serve over rice with naan and garnish with fresh parsley or cilantro.

      I made 10 slices for our dinner. I like mine less done, so mine wasn’t as brown. We usually do the food styling and photographing after we’re done filming so that our food doesn’t get too cold. And I think this picture was taken outside under sunlight, not fluorescent lighting.

    Can you explain the potato flakes a little more? Is there any substitution for that? Ive never seen such a thing before.

      Instant mashed potatoes is what potato flakes are. These are plain, so you’d need to make sure you aren’t getting flavored instant mashed potatoes. If you can find modified food starch, it would be interchangeable in this recipe. I believe this is the brand I used. idahoan.com/products/idahoan-original-mashed-potatoes-13-75oz/

      Just the gluten extracted from wheat. It’s wheat protein and it’s what makes bread chewy.

    Why do you call it tenderloin in the video title when you actually use a loin chop? Those are two different cuts of meat.

      The name of the sandwich is called tenderloin. You can use either cut of meat for it. If you want to use the tenderloin loin, pinwheel it and the sandwich will be the size of a platter. It’s your call.
