    This video is on, How to make authentic Puerto Rican Sofrito. My name is Derick Lopez also know as "thefreakinrican" . Im teaching you step by step on how to make your own sofrito. In this video im using a wooden spoon to rotate everything in the blender. Please if you do this at home make sure you do it with the blender off. Please suscribe. Y Buen Provecho

    After I make my sofrito, I pour it into ice trays and freeze it. Once frozen, put the sofrito cubes into plastic freezer bags and keep in freezer. When cooking, each cube is about 1 Heaping tablespoon. If you are making Arroz Con Gandules for example, you can throw 3-4 frozen cubes in with the pork while sautéing it. The frozen cubes only take a few moments to defrost while cooking. This is a great way to preserve your sofrito. These cubes will last for months in the freezer.

      I was just about to make this same suggestion about freezing it into cubes. I never thaw them though; I just pop them directly into whatever dish (usually rice dishes or stews) I'm making. We rock- huh? Lol.

    I'm so happy I came across your channel! My mom had me pretty late in life so by the time I was older, mostly everyone, aunts uncles grandparents, were already gone. I'm 36 now so I'm very excited to hopefully learn some recipes from my childhood with your channel😊😊 so that my children can enjoy the foods I did many years ago🙌🏼🙌🏼😍

    a quick tip when you open the bulb of garlic put the garlic in a plastic container and shake you won't have to peel them manually and its fun. great video

    Your comment about taking your time with the prepping of the different ingredients is so true. You CAN INDEED taste the difference in the food. YES, it is old school, but old school is delicious!...AGREED!! :) Cooking is my therapy, like you stated. Thank you for video, I love making Sofrito.

    I actually made this 2 weeks ago and completely forgot to leave a comment, so here it is. I love it!! I'm so use to buying the "Sofrito" from Goya at walmart. To say the least, I broke up with Goya "Sofrito" lol. This makes such a huge difference. The food taste better and I've even made some for my mother in law, who also loves it as well.     omgosh, I got nervous and literally jumped back in my seat when I saw you put the wooden spoon in to push down the ingredients. you brought me back to a time when I RUINED my whole batch of sofrito because I went too low with the spoon and it broke inside the container!     For a quick peal on the garlic separate the head into individual cloves get a mason jar ( quart size) put all the cloves in lid on and shake like you making a drink. The peels will come right off as the garlic bangs against the jar. Beats peeling by hand any day.

    I subscribed! I am pretty much into thai and asian cuisine but your channel enticed me and helped me to cook puerto rican. All recipes are great. I am a fan of good cooks as I am at home now no longer a cook out in the field, I went into medical. I believe though food is medicine and I like history with foods to know where they came from or how they are used for medicine for the body and of course taste!
    tip I want to share- home made funnel cut the plastic milk carton in half or a gal jug cut it near the handle and use the end part with as your funnel to pour into jars.

    Save your cutlery it looks like quality knives you're using, use wood cutting boards to lengthen the life of the cutlery and the edge will maintain it's sharpness a lot longer

    i have tried ur sofrito recipe and one other... I'm deff sticking to ur recipe. it made my husband go crazy over just beans lol. it made everything taste so fresh and it cost less to make it fresh rather than keep buying the jar which doesn't have as much flavor

    A good tip to get the skin right off of those garlic cloves is to run some hot water on them for a few seconds

    Yep this is the way I do mine, only thing I would use water instead of oil. Is it better to use Olive oil instead of regular cooking oil, or would you rather recommend regular oil?     I use Cabanele peppers instead. I don't put onions as I like to cook my onions first. Be careful with the ajitos as some are very spicy. Keep cooking sweety xo

    Hi... So happy I found your channel... Trying some of your recipes this week! Just wondering what kind of oil you use in your Sofrito. Also, wondering why you use canola oil in your arroz con gondules... I've always used olive oil. Wondering if it tastes better with canola or if it's healthier or just a personal preference. I've never tried canola oil.

      +Destiny Monique How are you . In the Sofrito I use olive oil. But yes I like canola as well as olive oil for the arroz con gandules.. It really is your preference. but canola is better to sauteed in.

    What if you can't find adjicito pepper. I have been to my local market, and the spanish market and there are none to be seen. Can I use a pueblo pepper or italian peppers for substitute?

      I live in Phoenix as well. I go to the Asian food stores. you can try that big one they opened a few months ago call international. they might have it and if not you can ask them to get it for you.

      +GQ3MindSpeaks How are you. I keep my sofrito up to 3 months and it doesnt go bad. not that it last that long cause i use it up pretty quickly. But you shouldnt have a problem since the oil preserves it

    I live in ft Lauderdale, and I can't get ajicitos anywhere. I've tried hunting them down for months. In N.Y., I used to get them. Any substitution?

      Have you tried shopping a bravo supermarket they usually have most things Spanish. I sworn I've seen them there.

      Sweet mini bell peppers usually sold in a mixed pepper bag assortment of colors in any supermarket would be a good substitute. Colors range from yellow, orange, red, green and light green. Very colorful and flavorful. Regards...Jorge.

      +Christina Serrano How are you Christina. Aye aye so it came out spicy.. We'll usually it will have a kick from the garlic. But if its to spicy , perhaps you used the Jamaican Ajicito.
