      Freddie Rivera You’re right in that she took the time to make this video, however, this is not authentic Arroz con gandules. If you’re going to show others how to cook Puerto Rican food, pls do it the right way. This is a slap to our ancestors. So in reference to hell, you better be careful because it is not some fake place it is REAL and unless you’re born again you’re at a very high risk at going there. Read the Word of God and seek Jesus before it’s too late because tomorrow is not promised.

      Monica Ortiz I noticed somethings she didn't do that didn't make it "authentic", like wash the rice or added stuff that may not seemed "authentic", but it's not like she poured only tomato sauce into the pot with the rice and water, then you can say that's not how you make it. Do you go on these videos and criticize and judge people for adding a dash of cumin or not making achiote oil? Now before you go telling people to about being born again and about hell, you can't start being hateful because she doesn't make the way your family makes it. Like it's a sin. Like Paul said about people hate will hate those who do good. Maybe you should go back and read the word instead of getting upset about how she's making arroz con gandules, but then trying to witness to somebody at the same time. "What defiles a man is not what goes in them, but what comes out of them" Lord have mercy!

      @@pinkstarlove3237 if you add too much water the rice becomes mushy, the rice will also cook from the steam, needs to be on a low flame, and i don't stir more than once and i use a big fork

      @@pinkstarlove3237 i stir the sauce right upto you add the rice. You stir one time until the water is gone. Turn rice once and set to simmer and cover. Wait 15 to 20 min on simmer and check rice. Do not over stir rice. Leave it alone and walk away. It creates a mushy mess by over stirring it.

    I wish I had never found this page. Because of you and your Recipe, I know have a dilema. My co-workers make me make the rice for every activity. This is the very best arroz con gandules recipe I have ever had in my life and I was just kidding, I’m grateful to you for posting it and changing my life. I thought all that oil is too much but it’s not. I did not want to change anything you suggested and I am so happy I didn’t. This is the second year using your recipe throughout the the year. I was so scared it would be gone because I wrote it down but could not find it. Glad your still here. Please show us how to make other things for parties.     An old friend from high school pass this recipe down to me. I love it. Made it for my African husband, once he seen the green olives he thought i didnt know how to cook. Every culture has a party rice. For the hoildays i make Puerto party rice, African party rice, and Asian shrimp fried rice. Hey im just a black girl that loves to cook. Great video :)

    Carmen, my daughter-in-law's parents are from Puerto Rico and the first time I had her mom's Arroz Con Gandules I was hooked and I wanted the recipe. Problem is, I don't speak Puerto Rican. Problem-solved thanks to your wonderful and thorough video. I have to follow recipes so I took the liberty of typing out your instructions below. I hope you do more authentic Puerto Rican videos in the future.
    Authentic Puerto Rican Arroz Con Gandules-Party Rice
    Recipe by: Carmen Felix
    Serves 25 as a side dish
    You need:
    Aluminum Foil
    Very large sturdy spoon
    Large stock pot
    Very Large Cast Aluminum Pot with Lid (15 x 5)
    Ingredients:
    1-1/2 cup Canola Oil
    1 large smoked ham steak
    Mojo:
    2 cans Goya Green Pidgeon Peas (Gandules Verdes)
    4 8 oz cans Goya Tomato Sauce (Salsa de Tomate)
    2 cups Homemade Sofrito:
    1 small yellow onion
    1 medium green bell pepper
    4 cloves garlic
    (combine in a blender till thick)6 envelopes
    1 jar Goya Stuffed Spanish Olives
    1 tsp Goya Adobo All Purpose Seasoning
    1/2 tsp. fresh cracked black pepper
    Pinch ground cumin
    1 tablespoon salt
    6 envelopes Goya Sazon (Con Culantro y Anchiote)
    2 envelopes Goya Ham Flavor Concentrate (Sabor a Jamon de Cocinar)
    1 envelope Goya Chicken Seasoning (Caldo con Sabor a Pollo)
    16 cups Goja medium grain rice
    1/2 gallon water
    Instructions:
    1. Cube the ham into small squares.
    2. Add the cubed ham to a sturdy frying pan and fry in all the oil over medium high to high heat stirring until it browns slightly (about 5 minutes). Remove from heat.
    3. Add the sofrito to a large stock pot, Add the remaining ingredients for the rice: tomato sauce, pidgeon peas undrained, olives undrained, Adobo, cumin, black pepper, salt and stir well to combine.
    4. Add the Sazon, ham and chicken seasonings and stir well to combine.
    5. Transfer the ham, oil and juices to the very large pot.
    6. Add the Mojo and stir to combine and bring to a gentle boil.
    7. Add the water, stirring to combine and heat up the liquid.
    8. Add some chopped fresh cilantro for extra flavor.
    9. Add the rice and stir until well combined. Bring to a gentle boil.
    10. Cover the pot completely with aluminum foil overlapping the pot edge leaving about 2 inches over the edge. The foil helps to trap the steam.
    11. Place the lid on the pot and boil for 5 minutes.
    12. Pull the aluminum foil up over the lid and remove the lid and stir the rice.
    13. Lower heat to medium and return the foil and lid to the pot and continue cooking for 10 minutes.
    14. First Turn: Pull the aluminum foil up over the lid and remove the lid and starting turning the rice from the bottom up scraping the bottom to remove bits.
    15. Return the foil and lid to the pot and continue cooking for 15 minutes.
    16. Second Turn: Pull the aluminum foil up over the lid and remove the lid and turn the rice from the bottom up scraping the bottom to remove bits. Fluff the rice by stabbing it with a spoon to release the steam.
    17. Return the foil and lid to the pot, lower the heat slightly and continue cooking for 20 minutes.
    18. Third Turn: Pull the aluminum foil up over the lid and remove the lid and turn the rice from the bottom up and fluffing the rice.
    19. Lower the heat slightly, return the foil and lid to the pot and continue cooking for about 20 minutes.
    20. Last Turn: After 20 minutes, remove the lid, discard the foil and fluff the rice. Remove from heat, replace the lid to keep warm and serve.

    I lost my mom almost 3 years ago and I will forever regret not taking the time to learn her recipe for this. I will be asking my dad soon but his just doesn't come out like my mama's would.     For those of us Puerto Ricans who don't live in Puerto Rico, New York or Florida, you may find the Culantro in Chinese Markets which they call Ngo Gai. I always make homemade Sofrito for my cooking. The music in the background makes me wish I could turn back time so I can be in Puerto Rico before so many family members passed away and have one more holiday together. Happy Thanksgiving everyone.     I'm Puertoriquen born in new Jersey. lived many years in Puerto Rico., everyone adds different ingredients and makes it different but it still taste delicious. I like to cover my rice with green banana leaves and than put the top on it. it gives it great flavor. I have seen it done like she does it and it still taste delicious. everyone just put different ingredients.

      I too am PR and in New Jersey, what she did is what you call "flavor", everyone especially Puerto Ricans have variations, but I guarantee that rice was delicious! This is the way true Puerto Ricans do it, with "flavorful" ingredients, so I have no idea why anyone would say anything bad about her recipe. Lets see them post a video and do it better!

    TY. Ive been trying to perfect Spanish rice and this is one of many videos I've watched that seems the best put together. I'm African American but I love cooking Spanish food because I love the cooking ethnicity of the Spanish race, so TY again for sharing this recipe. I will be cooking this tonight but instead of the ham I will be using pork chops and a little hot Italian sausages.😁

      Noooooo why would you do that to the rice? Lol Italian sausage is for italian dishes. And pork chops? Both of those will completely change the taste of the dish. Btw im also african american (dating a puerto rican woman). Im also a professiinal chef and like encouraging creativity but certain dishes, like this one, are best traditionally made. Good luck either way

    I just made your rice and it is absolutely delicious and full of flavor. I cut the recipe in half because I wanted to try it out before making it for a party. Came out perfect. Thank you so much for explaining all the spices and herbs you use. I tried to make Arroz con Gandules about 8 years ago and it was tasteless and dry; now thanks to you, I am a success. You are a wonderful teacher. And I like your Sofrito recipe so much better than the Goya frozen. Please keep sharing.

      noit didn't ..if you look you can see raw bits of rice all through it because she stirred it too much and it cooked uneven...rice steams itself...you let the water evaporate uncovered...then you stir ONCE and lower heat and cover...

      there was ZERO "raw" rice bits. Get your eyes checked and watch the end of the video again. I see nothing but perfect delicious looking rice. I wish I could dive right thru the screen into that rice it looked so f-ing great!

      Newly Awakened you need your eyes checked that lumpy clumpy mogollao mess looks nasty but it's whatever. I can cook. I actually make a party pot of rice that lasts ten minutes at parties. I don't pretend to be a chef and load my food up with ten pounds of msg so it can have flavor. I've given directions already. She overstirred. That lets out all the steam and you get overcooked and raw rice because the stirring gives you hot and cold spots. But she would know that if she actually knew how to cook.

    I really like this recipe! Although I prefer making my own achiote oil for the color and banana leaves for the cooking process this method works as well! There are a million ways to make rice and I have just added your recipe to my bag of tricks. Thanks for sharing your time with us!

    I love it!! I have a recipe given to me by a friend of my Moms. It was his Mom a family recipe all the way from Puerto Rico.. Fabulous .. I always use Goya even when I am making any kind of dish, it is the best. Even in my tilapia or chicken.. Yum!!

    The use of aluminum foil to keep steam in is exactly what I use, Yeah a kindred spirit. My Mom uses the plaintain oja which is good too. but the aluminum makes it so much more convenient to do the turning. Gracias Carmen for sharing.

    Carmen, this is one of the best videos I've seen especially for more than 5 people. The type of preparation for a big gathering that I'm used to. I like the way you do it.     People need to remember that this is for a PARTY!!! There is not too much time for the DYS details. When I host for a lot of people, this is exactly what I do.     I sauté everything in the pot of the rice all the flavor stay in that pot, and I only mix once n leave it for about half hour and rice is perfectly cook.
