Put some char on the damn tortilla
Add 1/4 of the amount of flour and replace with corn or potato starch and a teaspoon of baking soda so the batter doesn’t burn and you get a nice crispy batter.

She’s using an $80 piece of fish. Chilean Seabass is the best but I would never fry it Grillet sauté it fry use cod.
