    Tip: loosely tape a ziploc bag to the inside of your food mill box. Then place your little pieces inside the ziploc bag. I always do this for all my loose parts that I don’t want to lose and I never have to look for them. Great job on your Apple preservation! Love it! ❤

      Amen..ill be 60 in a couple months..I used to do all the canning in my youth ..yes, I now look bk and I'm where how did I accomplish so much , now sometimes with neck surgery and Arthritis set up , it's difficult to move sometimes.Thank God im still alive some worse than I.❤

      I'm in my 70's and you are so right. I live in Wales UK and moved to a bungalow in the valleys with little garden so have an allotment just down the hill. By the time I've dug a bit and weeded a bit and sat a bit with a cup of tea I have to drag myself back up home at a snails pace and with all the aches and pains that go with it. I am so glad though that growing produce and foraging for nuts and berries was something I grew up with because it is so worth it . Not only is it wonderful to be immersed in nature but to know exactly where your food comes from is a bonus along with the reduction in cost and the chatter among the other plot holders. I am hoping to go out wearing my wellington boots and holding my spade!

    Becky, please read this! Your tray unit is upside down! The orange pads are the heating pads and they should be underneath. Your tray should be sliding in and out on the metal part. Hope you see this and fix it before you do too many batches!

    Tip: My dad loves to be a part of the fun in the kitchen when canning is done. He takes the screens out of our tomato juicers and power washes the screens. He is 81 and it makes him happy to get his power tools involved. : )

      Oh my Papa was a Apple coring fiend for us. If canning alone I just preferred less mechanical stuff and used a pot, paddle, roaster, and a pedestal chinoise. But if canning as a group...Papa and Dad liked to help if it involved food AND mechanical implements of destruction. Noisy as heck but fun to have everyone helping a bit instead of telling us how we are chatting too loud and disturbing the guys TV. 🤭

    The apples from the juicer would be perfect for making apple butter because juice is removed, its thicker so less cooking. Then you have the juice to start your large pot of apples for sauce.

    This video is EXACTLY what I needed today. Father-in-law gifted me 50 lbs of apples from his orchard and I was very overwhelmed with what I should do with them. Apple butter and pie filling here I come! What a brilliant idea to put the apple butter in oatmeal! ❤ you are wonderful.

      For your juicer I would steam the peels and cores... 38:09 38:11 might get a more flavorful juice.

      Since you only have two bolts to keep track of, just screw them on the posts where they belong. They won’t need to be tightened, just screwed on far enough not to come off.

    Becky you may know this but you can put your apple butter in a crock pot and let it cook overnight and it gets nice and dark and thick. Very easy to do and it doesn’t scorch or in my experience it hasn’t.

      I've done it that way also. I start it on high and then when it's cooking well. i turn it to low and set the lid so moisture escapes. I don't do this overnight, only when I'm close enough to keep an eye on it, I also stir it now and then.

      In the crockpot is the only way to do it. I start with multiple crockpots and as it cooks down, I condense them down til I have one huge batch. I've been doing it this way for years and will never go back.
      However, have you considered freeze drying and pondering the pulp leftover from the applesauce milly-thing? I bet that would be amazing to add to breads and muffins.

    I use pineapple juice to soak my apples while I'm processing them to prevent browning. I think lemon juice can make them taste more tart, so using the pineapple juice also keeps the sweetness of the apples. Of course, you could switch which one you use according to what type of apples you're processing and what you are making with them.

      I use ascorbic acid for the same reason. It doesn't alter the taste of the apples like lemon juice.

    When I make an apple pie I add a splash of orange juice to the mix. Not too much, just enough to make it slightly wet. When the pie bakes, it makes a delicious kind or “caramel-y” sauce with just a kiss of orange. It’s delicious. ❤

      I use maple syrup instead of brown sugar...SO good! You could also just go halvsies brown sugar and maple syrup...

    Another tip or two: Instead of coring apples for the apple butter, just wash the apples and quarter them. Place the quartered apple in a good sized microwave safe bowl (that will fit in the microwave) and microwave for approx. 12 - 15 +/- minutes (placing a plate under the bowl in case juices run over). Then, run through your food puree machine. That way you don't chance burning apples on the stove and have to keep an eye on it. This will also produce an almost syrupy juice at the bottom of the bowl which I have strained and put in as liquid in my baked oatmeal.
    Second tip: When putting your cooked apples through the food mill (puree) machine, I put the skins through 3 times. You would not believe how much more apple sauce come out. Hope this helps.

    We peeled and cored the apples. Then ran the apples through a cold juicer. Then took the pulp to make the applesauce/apple butter adding back in a little juice as needed instead of water when cooking down. We then also juiced the core and peels and mixed that with other juice. And used core and peel pulp to make apple cider vinegar. Some peels turned into apple sugar. Some pulp dehydrated for apple powder.

    Hey Becky.
    Nice video as always.
    Just a tip for you for next time you make apple sauce and apple butter etc. Use all of the peel skins and the apple pulp. Freeze dry them and once dry cumble them in a bit of brown sugar and cinnamon and put in a jar and it can be use like ganola crumbles. You can put it on oatmeal, on ice creams, on baked apples desserts, on salads etc. The skins are pack of nutients and a great amount of fiber. Instead of wasting the skin. It is very yummy and the only things that goes to trash is the core which you always feed to your chickens. So nothing goes to waste at all. Lol
    Try it next time and see if you and Josh enjoy it, instead of buying ganola you can make your own but from apple peel and pulp.
    Now after watching you tonight you are driving me to go to the final farmers market this weekend to buy some apples and make some apple crisp for my girls for school snacks and our home snacks. We will make different types of apple desserts and apple sauce etc. And the peels and pulp we will dry them and make our own apple crumble with brown sugar and cinnamon to put on our oatmeal, yogurt, salads, bake apples etc.
    Now i am hungry. 🤣🤣😂😂🤦🏾‍♀️🤦🏾‍♀️🤦🏾‍♀️ lol.

    Hey Becky, With the FD’r, You need to turn your rack around. The metal trays should always sit directly on the metal part of the tray. The heating pads should not touch the trays. 😃💕

    Suggestion: Next time wait to add any add-ins like walnuts after you’ve filled the first loaf pan. Then you’ll have one plain loaf for Josh & one walnut loaf for you. I do this when making banana bread. I fill the plain pan first then add nuts or chocolate chips to the batter for the second loaf.

    Baby A should be enjoying fresh organic apple 🍎 and pear 🍐 sauce, and juice. I felt such a sense of satisfaction feeding my daughters fresh organic produce from the garden, orchard, and citrus grove. It was so nice to see them stand in their yard and just enjoy the fruits of our labor. It was definitely a labor of love ❤️.

    Something to consider: some apples are better for baking because they are denser and hold their shape well in the cooking process. If possible you might want to try to ID what trees you have or just make the same recipe (in small amounts) with each variety. It’s similar to your fridge test, just another application. It might also be fun to see if you get noticeably different cider or applesauce with different varieties. I also use roasted tart apples (Granny Smith) in things like butternut squash soup, and raw granny smith in a chopped cranberry and navel orange salad (all the ingredients are tart then you set them in raspberry jello to make a type of relish consistency). It’s a delicious accompaniment to turkey, chicken or pork. This is all to say you may find savory applications (I know some people also use tart apples in stuffing) if you separate out the tart ones and preserve them somehow

    Love my freeze dryer! Try lightly sprinkling some cinnamon on your apples before freeze drying. Yum! Also you can layer the apples on each tray. Put some parchment paper in between each layer. As long as your within the weight limit of each tray just keep on layering.

      I sprinkled cinnamon on apple slices I dehydrated. My grandsons loved them.
      I also used Aldi sugar free applesauce to make fruit leather, for the grandkids. They loved that the most!
      I dehydrated pear slices and they are the favorite of all the fruits I dehydrated. I even tried frozen mango, strawberries, peaches, and pineapple, and dehydrated them from frozen....something not recommended, but I had no issue with juices dripping and making a mess. They went to the grandkids too!

    I ABSOLUTELY LOVE these hour long videos. They are my favorite, but then again, every one that you make is my favorite. You did get a lot of apples preserved in so Manny great recipes. I made Apple Butter 2 years ago, and it is so good. I made so much that we still have maybe 6 pints left. After I purchase the Sauce Master I'll start making apple sauce (which I have never done before).
    At one point, I thought I could smell that apple bread baking over here. 😂🍎🍞🍏
    I forgot to mention that I also made Peach Butter one year, and it was a huge hit. It went way too soon. I'm hoping to make more next year.

    My mother and I made applesauce with dark skinned apples. No peeling no coring. Just cook and we had a hand mill to put them in to separate seeds and hard parts out. The applesauce was a beautiful pink and tasted so good. Miss those days. Enjoy watching you so much!

    I think, in other parts of the country, apple cider refers to raw pressed juice. When I was growing up, there used to be farm stands that had presses and sold the cider by the glass.

    You can pile the apples on top of each other and get more on each tray. As long as you are within the weight limit for each tray. If you are worried about sticking, put a layer of parchment paper between each layer.

      This ☝🏼 is how I do my fruit! I purchased precut parchment paper and layer layer layer. I can fit 3 layers of apples easy with parchment in between.

    Hey Becky. I used to work in a bakery as a donut fryer and made apple fritters every day. Now I'm a home baker and I make donuts at home. I dislike using a ton of oil and deep frying but the donuts really need to float in the oil to help the outside cook a little slower than if they are touching the bottom of the pan. I put about 3 -4 inches of oil in my deep frying pan or soup pot. Personally I make donuts every couple months so I have a jar that I strain and clean the bits out of the oil into and save to use first next time. Keep up the great work I love your videos 😊

    For applesauce I usually cook the apples in a splash of vanilla and I use cinnamon sticks.. I also leave the apples whole and run them through the food mill...LOVEEE

    That apple juice would have been a great no sugar add juice for your baby! My babies drank a lot of apple juice and it wasn’t always easy to find low/no sugar organic juice

    You can also cook down/reduce the apple juice until it caramelizes, and you'll get the most amazing zingy syrup for pancakes, desserts etc. No need to add any sugar, as the juice has natural sugars in it. You only need to decide how far to take it. I have one jar that I need a spoon to scoop out the syrup. Yum.. :)

    I just did this- core apples- cut in small pieces - blend in blender till fine( peelings on) with a little water- I pour in kettle add 1/4 cup sugar per 3 cups of blended apples plus 1/4 flat tsp of salt per the 3 cups of apples - I boil and stir a lot for about8 min- Then I can in jars and scree tight and set in kettle of hot water with cloth at bottom and seam with cloth over for 10- 12 min - then uncover- cool a bit and set on level space- They always seal- With perlings used makes best sauce ever(( peelings))

    Use mineral oil on the gears instead of olive oil for your Kitchen Aid apple spiralizer. It is water based and will not get sticky or rancid. I apply mineral oil to my equipment before storage. It preserves and keeps rust at away!! Love your videos❤

    One thing to think about is using the pulp from the juicer to make your apple butter, since a lot of the moisture has already been removed, but I would use a crockpot though to avoid scorching (ask me me how I know☹️) also, that mild flavored apple juice with no added sugar would be perfect for your little guy!!! I can’t wait to see your pantry after all the preserving you have done. I would love a recap of all the recipes you did this season and how many jars of each!

    Next time you make any kind of bread with walnuts try pouring the batter in one pan with no nuts and then add nuts to the 2nd pan this way you and Josh both can have it the way you want it without the other one having to settle.

    If you make you apple butter in a crock pot you don’t need to stir it. You put wooden skewers under the lid the steam can escape. You leave it go overnight fill it back up with more apple sauce in the morning and let it cook off throughout the day. Set and forget it. Lol.

    You can process TOMATOES the same way you did the for the apple sauce. Cut in half, boil for 10-15 mins & put through the food mill. Then add the rest of your ingredients for the recipe you are making.

    My grandmother always left skins on and then used a manual crank food mill. The apple sauce had much better flavor and color. We used Macintosh apples. I plan to go pick some Mac’s this week here in Maine. I still have her food mill. She would have been 117 this year, but we had her for 96 years. I carry her in my heart and in my cooking. ❤😀

    One other suggestion...get yourself a wire mesh garden cart. Easy to wheel to and from the garden with all of your baskets and tools. And when he gets a little bit older, toss in a cushion, and Baby Acre will love to join you for the ride! You can even prop/zip tie a golfing umbrella over one end for shade for delicate herbs (and the delicate skin of Baby Acre)! You can also hose off the dirt right through the wire mesh. Love the channel, keep up the great work!

    Hi Becky,a suggestion for the nuts for your machine, put them in a ziploc baggie and keep in the box with your food mill, you could even tape the baggie inside the box. Love your videos.

    My husband and I used to run a custom cider mill (people brought their apples to us and we pressed them into cider.) We found that the best tasting cider was made from a blend of 4-5 varieties of apples.

    if the apples are washed, then all those apple scrapes can be turned into apple jelly. For nice colour drop them in water as they come off the slicer, corer, slicer. Boil the scrape until the volumn decreases to about half,. Hang it in a muslin bag and let drip overnight (don't squeze the bag) and you have the juice to make the jelly. ratios of sugar to juice is about 1cup juice to 1 and 2 tbls lemon juice. There are several instructions on jelly making on the web for full directions. I use the jelly in many different ways from desserts to savory glazes.

    I peeled cored and sliced my apples. Weighed out 2lbs per tray put them in a ziplock bag. froze the bag. To pre freeze.Loaded them onto the freeze drier trays Stacked the apples It has been taking about 32hrs to freeze dry 8lbs of apples. Look into apple butter cooked overnight in the crockpot. You use the immersion blender to blend. It doesn't burn and you don't have to stir boiling apple butter on the stove.

    Two suggestions - you can still use the leftover cores/ peels to make juice! I was dying seeing them set to the side, lol.
    On the freeze dryer, the orange is supposed to go on the underside, not the top. :)

    I use the steam juicer a lot, often with rhubarb, blackberries or blueberries. I steam it, then boil it with som sugar and put them in bottles in the freezer! It’s sooo good!

    SMALL PARTS - screws, tiny attachments, etc: Put them in large ziploc bag inside appliance box and label. This way everything is in one place. You can also add a quick assembly note for items you don't use often. Can't tell you how many tiny parts I've 'safely stored' never to be seen again! Love you!

    Zip Lock Bags - Best invention ever. All small parts (nuts, bolts, washers, screws, etc., and the tools if they came with it) go into a zip bag and kept in the box with the piece of equipment. Or, inside the crockpot ect.

    My father has always preserved apples. One of the best recipes that came from that is using his dehydrated apple slices to make fried apple pies.
    We reconstitute the apples by adding water, dried apples, and spices (and sometimes a little sugar) to a boiler until apples are soft and liquid reduces to look like apple pie filling. Then we roll out canned biscuits or homemade biscuit dough into circles. Spoon in pie filling, fold in half, seal edges with fork and fry in about 1/4 inch of hot oil. Southern version of a handpie. Something we always had year round due to my dad perserving several gallon jars of dehydration apples each year.

    I made apple butter once (it’s not really a thing in Norway). I used apple butter and chopped almonds and made apple rolls (same dough as cinnamon rolls, but used the apple butter an almonds instead of the regular stuff). It was soo good!!

    When you're cutting apples (or potatoes) fill your sink with cold water and add lemon juice. This is called acidulated water and prevent any browning. BTW, Becky, you amaze me with how much you get done. You do more before 8am than I do all week!

    Becky, I love watching you with your apples, however something else caught my eye. A cute toy that your son must play with. OMG he is able to support himself and play with his toys. That’s just great!! Soon he will be walking and talking.
    Now back to your apples 🍎 Your lovely cutting board that hole or handle can be used to dispose of your scraps. Just have the hole over your sink a little bit have a bowl or some container sitting in your sink and swipe the apple cores etc. through the hole to catch your scraps.

    Love your videos ! We had tons of blooms on our fruit trees this past spring. We then had a crazy late hard freeze and it zapped them all. Most of them produced little to no fruit this year and we lost of few of them. We were so upset! We have a ton of new fruit trees going into the food forest and we are making sure that we do some heavy heavy mulching to protect those roots.

      @@AcreHomesteadThe every-other-year bountiful production is from not thinning the fruit enough. It kind of overtaxes the tree and then it doesn’t produce much the next year. If you thin the apples well, it will even out to produce well every year. The cluster of blossoms/fruit has what is called a king blossom/fruit. It is best to take all the fruit off except the king fruit, the biggest one usually in the middle. Also, thin the fruit to one every 6” or so. It’s hard to take off that much fruit, but it’s worth it when you get a nice crop of larger apples and a lot every year.

    I have a manual peeler, slicer, corer and love it. With one helper, we would take off any bad spots and then run them through to make slices for applesauce. When we got a large glass bowl full, we cooked them in the microwave, added sugar if needed and jarred it up immediately. Then took all the peels, cores, and any apple pieces that wouldn't work on the slicer, put them all into a large pot and add water to 1/2 way up the pot. Cook until totally mushy and then put them into a juicing bag,( a piece of old sheet) and hang to drip overnight. We used the juice for jelly and put the rest through the food mill on my Oster and made that into apple butter. If we had a 3rd person, we easily went through at least a bushel in one day.

    I’m curious what all of you do to keep the bugs off of your trees. I don’t want to use pesticides, of course, but the apples are always covered in bug holes (as well as the leaves). Would love a tip or two for next year

      I don't lots and lots of my apples have bug damage. that is why most of then have to be processed right away.

      I think James Prigioni uses kaolin clay sprayed on the young fruit, might be worth checking that out. We don’t have it in the UK that I can see, so not sure what it would be called if there is a specific brand to use for this but it is organic 😊

      I have used little nylon bags to put on my apples in the past. I get them from Raintree Nursery online. I put them on with a twist tie, they work well for me, but it is very labor intensive. I have three trees, so that’s a lot of apples. I tried spraying with spinosad this year and I must have timed it wrong, it was the buggiest my apples have ever been. I think I’ll go back to the bags. I have to put them on when the apples are about 1” in diameter.

    you can pile them up, you can also separate layers with parchment to get more fruit on the trays! Dont be scared of loading the trays! Bananas are great too...

    It may just be reflection, but it looked like you put your new shelf unit in upside down. Your metal trays are supposed to sit on the metal floors of the shelves. Always metal floors, orange ceilings. Also, you can put more apples on your trays. Unless there is a lot of sugar in your slices they won't stick together.
