My mother’s “cakey” mandazi recipe

  • Ingredients
    1/2 glass Margarine
    1/2 glass Sugar
    6 glasses self raising flour
    500ml warm milk
    Procedure
    1.Mix the margarine and sugar in a bowl
    2.Add the flour into the mixture and mix
    3. Form a well in the middle of the mixture and pour the milk
    4. Knead to achieve the desired consistency as illustrated in the video. You can retain some flour and add it at this stage to make the dough firm.
    5.Cover with a cloth and let the dough rest for a minimum of 30 minutes.
    6. Roll into a circle with a thickness of 4mm and cut into desired shape and size.
    7.Heat oil until blue smoke is visible for best results
    8.Deep fry until the mandazi turns brown and flip.
