- Bottarga is an Italian delicacy made of cured and dried fish eggs. The fish egg sacs from either the grey mullet or yellow fin tuna are pressed to remove any air pockets, then packed under some salt to extract any moisture. The cured fish eggs are then air dried for up to 3 months to preserve them. Bottarga can be grated in to pasta dishes or grated onto bread or eggs to serve as antipasti. Once opened, bottarga will last up to a year in the refrigerator. Bottarga is sometimes referred to as the 'poor man's caviar' as it is also made with fish eggs. However, it is still not a cheap product due to it's labour intensive production method, but used sparingly it will go a long way to add flavour to your dishes!

Bottarga is always delicious. So many different flavors and varieties depending on the country. For eating straight, Egyptian bottarga is unparalleled. Grated, go with Norwegian every time, it's made with cod roe.
Thank you. I will look out for it.
How dull is that knife! I was happy to see you not pull the paper off before cutting. I didn't understand your method the first time so i was glad you changed it because i was waiting for it.
Thank you for this video.
banana scale is always critical
I had some in a restaurant as an appetizer along with fermented cabbage. Not knowing what it was I was so surprised. Although not tasting great in my opinion it is crazy how flavorful it is, way more than caviar. (pretty sure i had tuna as well, judging by your reaction)
the mullet bottarga is way better imo.
Good
getting shrimp paste vibes for its flavor and cooking purpose
that's a similarity I hadn't thought of. The tuna bottarga was pretty salty, but the mullet bottarga was milder and not as harsh.
