How to make Bottarga - Italian Cured Fish Roe

- As promised in the last video " spaghetti with homemade Bottarga" today I will show you how easy it is to prepare bottarga at home.
You will only need some salt and fish roe sacs, specifically I used:
Fish roe sacs 150 g + 150 g
Sea salt 200 g

That looks very straight forward and easy to do but getting the fresh tuna roe is probably not going to be easy nowadays. As a boy I remember we got smoked cod roe from the fish monger. It was smoked in the roe sack so looked very similar to your Bottarga but with that typical smoked dark amber colour on the outside. Very delicious.

Is the weight ratio here for a soft bottarga that slices easy but clogs up the grater? I prefer it more dried out. Wondering how much more weight or days in the fridge for bottarga that grates nice and dry.
You should try and find the right amount of days because every fridge are different

Yes 👍🏼 maybe you need to order in advance from fisherman or fish shop. Or you can try to use the smoked ones for the pasta 🍝🤪👍🏼

It's like Caviar, kind of. Of course not the same but similar. Some decades ago I ordered Spaghetti with Bottarga (not knowing what it would be, althoughI'm Italian) in Sardinia and it was _*spectacular*_. . It's like the essence of the beautiful Mediterranean Sea.
