    I like my rusks really hard and dense. These are for kids. I'll try this with much less butter, much less self raising flour and add in some strong bread flour along with a tonne of caraway seeds. Hopefully I'll be able to recreate the hard, tasty rusks we had as kids.

    very nice - but what is cream of Tartar, you really need it - in Germany we dont get it! Thanks for your info 🙂

    Remember, only if you used yeast you'd need to knead. No need for kneading here 🙂

    You're not very specific in regards to the drying, so many variations online. What temperature do you use and is oven door slightly open or closed?

    What is the purpose of the cream of tarter

      The cream of tartar has the same effect on turning the milk to buttermilk, so you can just use buttermilk instead of normal milk

      Nope it's not biscotti, as biscotti is thin slices. It's called Rusks.
