Fried Green Tomatoes - Crispy Classic Dish

    Classic Southern Fried Green Tomatoes
    2 medium to large green tomatoes
    Sugar for sprinkling
    Black pepper
    1 cup cornmeal mix
    2 tablespoons Red River Ranch Mesquite or other all-purpose seasoning
    1 cup all-purpose flour (divided)
    1 ( 5 oz.) sack Texas Toast Garlic Cheese Croutons (or other seasoned croutons), finely crushed
    1 egg
    1 cup buttermilk
    Fry oil (Canola oil, peanut, etc.)
    -Slice the tomatoes about ¼ - inch thick and set on two paper towels.
    -Sprinkle both sides of the tomatoes generously with the sugar and then with the black pepper. Cover with a paper towel and let set 10 minutes.
    -In a bowl, combine the cornmeal mix, seasoning and ½ cup of the flour. Set aside.
    -In a separate bowl, combine the bread crumbs and the remaining ½ cup flour.
    -In a third bowl, whisk together the egg and buttermilk.
    -Pour the oil in a cast iron skillet about ¼-inch deep. Heat to 350 degrees F.
    -Uncover the tomatoes and sprinkle lightly with sugar, once more. Skip this step if you like a more tart tomato.
    -Dredge each tomato in the buttermilk followed by the cornmeal mix.
    -Dredge through the buttermilk again and then finish in the crouton mixture to generously coat. Lightly pat the crumb mixture on both sides of the tomato so it sticks before frying.
    -Fry about 1 - 2 minutes per side or until crispy and golden brown. Let cool on a wire rack. Serve warm.

    This is a classic southern fried speciality. And since it's tomato and garden season we thought this would be a great one to share. These come out crispy and with a great flavor with the special crust we put on them.

    My momma’s from Kentucky and she always fried them in bacon grease. Yum yum. Come to think of it we always had a can of baking grease by the stove. She flavored everything with it. 🤗🤗

    I can't get enough fried green tomatoes. The greener the better. Black Crim are sweet for this. Mother was born in 1929. Learned most of my cooking from her. Good oakie comfort foods. Thank you.

    Momma & I love fried green tomatoes. We worked in festival foods at Dollywood a couple of years ago. During the fall festival I was the primary fry cook and momma and other ladies (guys could do it, but the ladies usually beaded them better) prepped many many pounds of tomatoes per day for several weeks! We used panko for the crunch. We offered helpings of tomatoes with a sauce made in-house and also a green tomato BLT on house made bread...we couldn’t keep up. Thanks for sharing with all of us.

    Years ago I heard of fried green tomatoes. I picked some from the garden. Fried them, too sour did not like them. Tried them in a restaurant a couple times, too sour did not like them. Ordered some in a restaurant in Memphis Tennessee they were delicious. Always wandered what they done deferent. Came across your video and found out the whole secret is the sugar. They are really good. Thank you Cowboy Kent. My tomato crop was a bust this year in NW Oklahoma. Now it is October my plants are loaded with green tomatoes.

      Ocala was Fort Repose in the great atomic war book of 1959 called, Alas Babylon. If you have read that could you share if any of the streets or place names are real or if Stewart changed those as well as Ocala's name? Well, do so after frying up a mess of green tomatoes!

    I will have to try this one. I like fried green tomatoes, but I have tried the basic recipe with a firm red tomato, and it tasted great! Like crunchy tomato soup!

    My best friend for over 40 years, who was also my matron of honor, used to make these for me sometimes when we would have lunch at her home. She did not use cornmeal - or sugar - but they were still outstanding.
    How I miss her since she has gone to her reward!

    I remember when I was a kid my great grandma in Dayton Ohio had a garden in her backyard and we would pick the green tomatoes to make this. Thank you for the recipe.

      It all came back to me- my father use to fry up green tomatoes and only me and dad would eat them- sister and mom wouldn’t have nothing to do with them- I guess I’m in the hunt for green tomatoes- they were terrific!!- something like your videos!!

    I love fried green tomatoes. My mom was from Kentucky and she always put sugar on ours. My whole family likes them this way. I canned some sliced green tomatoes. You put the slices in a wide mouth pint jar, 1 teaspoon salt. Cover with boiling water and put the jar lid on. Done. Don’t process. I’m fixing some today that are 2 years old. Just a little soft but not bad. Mouths watering just thinking about it. God bless you, Shannon, Beag n Duke.

      As an Alabama country girl I can’t abide sugar on my fried green tomatoes cornbread or biscuits. But my sister in Tennessee puts sugar in everything. To each his own. They do look good. Have you ever tried cubing the green tomatoes and mixing okra and potatoes fried them together like pan fried potatoes with a little onion. It’ll make you want to slap your Mama!

    That's a good size garden your neighbors got there Kent, coming close to a truck patch ! 😊 That be a good neighbor to have for sure !
    One thing about living in southern Arizona, I can have good vine ripe tomatoes all winter long, and lots of green ones too ! Some good eating there !
    Done got hot enough now that they're burning up so better gather all the green ones and fry some up !

    Your Mom and Grandma must have known my Mom and Grandma!!
    They fixed the fried green tomatoes and fried chicken on Saturday afternoon! We ate supper under the oak trees and enjoyed the Summer season and the fresh from the garden veggies!
    Brings back so many memories!

    I like mine sliced paper thin and just lightly dredged with flower and then fried until crisp. They're almost like chips and make a great sandwich with a bit of mayo. I also like to give my zuck's the same treatment.

      I had plenty of fried tomatoes growing up in California and Illinois. My Grandmother from Wisconsin would make them before the frost hit. My Mom was from Oklahoma...go figure. Don't claim them for the south. Oklahoma is south, it's Midwest, it's west...….it has a border with Colorado, just across the Cimarron river. I live in the deep south, just 3 miles south of the Alabama border and ya fried tomatoes in the summer is a staple, but, to claim them for just the south is not correct and borders on bragging.

    I was born and raised in GA but moved to Colo, the one thing I miss is FGT, people out here don't know what they're missing but I've never heard of putting sugar on them, if I ever get some I'm trying your recipe, your videos are awesome, I've told myself that I have to get your book, thanks Kent and God bless you and your wife

    Thanks for the video. I live in New England so I didn't grow up having these however I have made them a couple times and they were too tart for my liking. Thanks for the tips on using tomatoes with some color and sprinkling with sugar. I will give these another try as the tomatoes in my garden should be ready soon. Happy 4th to you as well.

    I'm stoppin' by EVERY Cowboy Kent video I can today and lettin' the world know how UNBELIEVABLY GOOD his Red River Ranch Original Seasoning is!!! I haven't tried his other stuff (YET!), but his Original is CRAZY good! I'm not lyin....if I didn't like it I would just not comment. I sure wouldn't come here and sound like a pitch man! lol. But seriously, folks...I've been cookin' 35 years, and I've tried just about every seasoning, spice, and rub you can imagine. Kent's is unique, truly different and awesome.       Sapo I'm from California but I was raised in a dust bowl family and my southern granny would have spit fire if she saw sugar put on those tomatoes. She taught us to use cornmeal and fry them in bacon grease. She was also a firm believer that sugar in cornbread was cake not cornbread!

    I HATE tomatoes! RED ones that is! but I LOVE fried green tomatoes!!! Can't get enough of them in the summer! My mom gets on to me for picking all her green tomatoes!! LOL She says she aint gonna have any ripe ones to can if I keep pickin the green ones!

      try some fried red tomatoes but still firm. Not so tart and you don't have to ruin the fried green tomatoes with sugar. I guess Cowboy Kent was raised on the sissy side of the prairie.

      I felt the same way when I was your age. Loved it when mom fried green tomatoes, but hated red tomatoes. I put out my first garden that was 100 percent mine when I was about 14. I tried one of the ripe ones with salt and loved it. Maybe it was different because I'd been nurturing these plants since spring. Whatever it was I've been hooked since. Spent a lot of time when I was younger with a salt shaker and pocket knife eating off the vine.

    My Mom was from Oklahoma, but I grew up in California and Illinois. I'm an old man now but in my life I have been to every state except a hand full of very north New England states. I have traveled a lot in my working years, and I did not stop traveling after I retired. I have been to at least a thousand cafes and restaurants all across the country. I like stopping at the little podunk Mom and Pop places and not the big chains. A lot of folks might get mad at me for saying this but I don't care. The best ole homegrown down home food I have ever had was in Oklahoma. Those folks can cook now...man I mean it, and consistently too. Fried chicken, rabbit, catfish, all game you can imagine( and some you can't :) etc. Okra all styles, potatoes all styles, all greens and beans, turnips and ham hocks, biscuits all styles, roast turkey and bacon, man you name it....gravy, gravy, gravy :) They even have a lot of TexMex and Itallian food that is outstanding. If I died and had the choice of going to food heaven, but only in the U.S. it would be Oklahoma.

    We thank you, Kent and Shannon Rollins. Dad was a Navy Corpsman attached to the Marines, oldest brother was in the army, next oldest brother was in the Navy, next oldest brother was in the Air Force and I was Coast Guard. We have all the bases covered with this family.
