    You can also follow the traditional method of making the Sweet Mango Pickle by maturing it in sunlight but do make sure there is no water at all and increase the amount of vinegar being used to ½ cup.

    Recipe :
    Sweet Mango Pickle
    Preparation Time: 10 minutes
    Cooking Time: 10-12 minutes
    Makes: 1 Kilo
    Ingredients:
    4 cups chopped green mango pieces
    2 cups Sugar
    1 tsp turmeric powder
    1 tsp nigella seeds (kalonji)
    1 tsp fenugreek seeds
    1 tsp red chili powder
    2 tbsp salt
    ¼ cup Vinegar
    Method:
    Dry the mango pieces completely by wiping with a towel or kitchen cloth.
    Collect the mango pieces in a steel or ceramic bowl.
    Now, add salt, turmeric powder, red chili powder, mix together and set aside for 4-5 minutes.
    Add the sugar, nigella seeds, fenugreek seeds and mix very well. Rest for 3-4 minutes.
    Cook everything together on a low heat till you get a sticky consistency in the sugar syrup.
    Add the vinegar, cook for 2-3 minutes. Remove from heat.
    Store this sweet Mango Pickle in a clean, sterilized glass or ceramic jar.
