a bunch of Mizuna (cut into 2-3 inches long, leaves and stems are both edible)
(available at Japanese grocery stores, or from Yasutomi Farm at Farmers Markets throughout southern California)

red onion (sliced and submerge in water for 20min)

This plant is mad, I sowed way too many of those and I'm just adding it to everything now, just to keep up with it growing like crazy.
Mizuna is easy to grow but suffers from serious flea beetle attacks in summer. My mizuna plants recovered in fall after the flea beetle attack, but still the scene was horrific. I have never seen so many flea beetles in my entire life.

I heard bitter greens like arugula, broccoli rabae, collard, dandelion, endive, kale, mustard and radicchio are healthy for the gallbladder. But in Japan I only see vegetables lile shungiku, komatsuna, santona and mizuna but I don't know what they are, are any of them like a bitter green? I think mizuna might be. Thank you!
there are many bitter greens, especially in spring! mizuna is rather spicy than bitter, In my opinion.... yes, shungiku is good bitter, and it's all year around. usually served cooked, but it's young leaves are great in salad, too

good question! I usually wrap the stem part with wet paper towel.... it kinda does the job, but not really. I'll ask the farmer!
