Tawa Baingan Fry is an extremely easy yet delicious accompaniment to the khichdi we make on Makar Sankranti. Tawa Baingan Fry is also known as Begun Bhaja in West Bengal and the sliced Brinjal gets a sprinkling of Rice Flour instead of the Rawa. You can serve this Tawa Baingan Fry as a side dish for any meal.
    So the popular saying “khichdi tere 4 yaar, dahi , chutney, papad, achaar” now gets another accompaniment added to it- Tawa Baingan Fry!

    Recipe :
    Tawa Baingan Fry & Masala Khichdi
    Ingredients:
    300 Grams Round Brinjal
    1 Tsp Turmeric Powder
    1 Tsp Cumin Powder
    1 Tsp Amchur Powder
    1 Tsp Red Chilli Powder
    Salt or as required
    5 Tbsp Fine Semolina
    4 Tbsp Mustard Oil or as required
    For Khichdi:
    1 Cup Moong Dal
    1 Cup Rice
    Salt to Taste
    1 Tsp Jeera
    2-3 Whole red chili
    2 tbsp Ghee
    1 Onion
    1 Tomato
    ¼ Cup Peas
    1 Large Potato, cubed
    Method:
    Wash and clean brinjal. Wipe it dry and cut it into medium thickness slices of about 0.5 cm thickness.
    Sprinkle turmeric powder ,red chilli powder, ,salt , amchur powder on brinjal slices, rub well.
    Take each slice of brinjal and place it over fine rava/ semolina such that brinjal slices are evenly coated.
    Heat nonstick tawa / griddle , put 1-2 tablespoon of oil and arrange rava coated brinjal slices on tawa. Drizzle few drops of oil on top of the brinjal slices.
    Fry on medium heat , once the base turns firm and golden in colour , flip and cook on other side .
    Flip couple of times and evenly cook on both sides till both sides are golden in colour.
    Remove brinjal slices and place them on kitchen paper towels.
    For the Khichdi, finely chop the onion.
    Heat the oil in the pressure cooker. Add the chopped onion and cook till lightly golden in colour. Add the washed dal and rice. Add 3 cups water, turmeric powder, salt to taste , cubed potato, peas, chopped tomatoes and pressure cook for 2 whistles.
    Heat the ghee in a pan. Add the cumin seeds and the red chilies. Stir till fragrant. Add the cooked khichdi and mix well. Add water to adjust consistency as required. Serve hot with the brinjal fry.
