    Difference between the regular khichdi and the restaurant style dal khichdi is that while for the homestyle khichdi the dal and rice are cooked together, in the restaurant style dal khichdi they are cooked separately. The restaurant style dal khichdi also gets a double tempering for double the flavour.

    Recipe :
    Dal Khichdi
    Preparation Time: 20 minutes
    Cooking Time: 20 minutes
    Serves:3-4
    Ingredients:
    1 cup rice
    ½ cup toor dal (arhar)
    ¼ cup red masoor dal
    ¼ cup yellow moong dal
    2 tbsp oil
    1 onion, finely sliced
    1 tomato, finely sliced
    1 tbsp chopped ginger
    2 green chilies, finely chopped
    1 tsp cumin seeds
    2 bay leaves
    3-4 cloves
    1 tsp red chili powder
    1 tsp turmeric powder
    Salt to taste
    For the tempering:
    2 tbsp ghee
    3- 4 whole red chilies
    1 tsp mustard seeds
    1 tbsp chopped garlic
    1 tsp cumin seeds
    1 tsp Kashmiri red chili powder
    8-10 curry leaves
    Chopped coriander
    Method:
    Wash and soak the rice and dals separately.
    Pressure cook the dals with 3 cup water, salt to taste & turmeric powder.
    Boil the rice in 4 cups water till done and drain the excess water.
    Heat the oil in the pan. Add the cumin seeds, cloves, bay leaves and allow to splutter. Add the sliced onions and saute till golden. Add the ginger, green chilies, and saute till fragrant. Add the tomatoes, red chili powder and mix well. Cook till the tomatoes are softened. Add the cooked dal and rice and mix well. Cook for 3-4 minutes. Adjust consistency bu addin more water if required.
    Remove to serving bowl.
    Heat the ghee. Add the cumin seeds and whole red chilies and allow to turn fragrant. Add the chopped garlic and saute till golden. Add curry leaves, red chili powder. Mix and remove from heat. Immediately pour over the prepared khichdi & serve.
