i hope you can post all your wonderful side dishes that you cook with your steak experiments.
I like the idea of finishing them off on the grill and butter basting, I’ll have to try that but I don’t like to wrap my potatoes in foil. I prefer a nice crispy and delicious skin, so I just lightly coat them in oil, season the outside with salt & pepper, and bake them in the oven unwrapped. Same results inside, but that crispy, seasoned skin makes such a difference in texture and flavor.

Hey Guga! It's me again. I'm the same guy that brouy you the jerk seasoning idea to beef and now I'm back with another one.
I'm going to recommend to you a sauce that goes perfectly with an extremely sharp cheddar cheese. This sauce I believe has enough acidity that you should be able to use a tenderizer and even dry age. The flavor however is phenomenal. It is called "BRANSTON PICKLE". This sauce has a lovely flavor that I'm confident you'll enjoy. Please try this out and let me know how it works out for you.

Use Waygu, duck fat or any rendered fat(sparingly on the first bake. Then for the basting roasted garlic/roasemary butter should work just fine

I get the mashed potato stuffing. But do you eat the outside skin? I suspect not, but then... Why not just bake a potato mash dish for the crispy bits?
