Claypot chicken rice made easy (ingredient list provided)

  • Home Cooked Claypot Chicken Rice is one very commonly found comfort food for many inlucing Ah Pa. At the restaurant or stalls, the chefs will cook the rice and meat all inside the same claypot from scratched. This method can be very challenging for many home cooks, as either the rice is cooked, but the chicken is not yet fully cooked, or the rice is burnt when the chicken is fully cooked. Therefore, Ah Pa always cook the rice and chicken separately, then combine them together in a pot after that. If you wanted some charred rice at the bottom, you can still achieve that by heating up the pot for few more minutes on stove.
    Ingredients:
    2 cups of rice (water ratio is 1:1.1)
    2 chicken thighs
    1 shiitake mushroom (soaked and sliced)
    1 Chinese sausage, lap cheong (thinly sliced diagonally and pan-fry in advance)
    1 tablespoon of chopped garlic
    1 tablespoon of chopped ginger
    Some vegetables
    Marinade for Chicken and Mushroom:
    1 tablespoon of oyster sauce
    Few drops of sesame oil
    Few dashes of white pepper
    1 round of light soya sauce
    ½ cap of shaoxing cooking wine
    Seasoning:
    1 cap of Shaoxing cooking wine
    1 round of dark soya sauce (for colours)
    Pinch of salt
    Pinch of sugar

    This is exactly how my mother would make it, last I ate it was 10 years ago (minus pork, bcs we don't eat it). We would have just plain blanched bean sprout with it

    Cooking Ah Pa you make everything looks so easy! I love Clay Pot Rice this is the smartest method I've come across on CZcams. What's the nonstick wok you use (or recommend) on the induction cooktop?

      Any stone coated non stick would be good, i use medical stone/maifan stone wok

    Hello Ah Pa! Recently my husband and I went to eat claypot chicken rice in a stall in Jalan Ipoh and loved it. I’ve always enjoyed the salted fish used in these traditional claypot chicken rice stalls but I’m not sure what type to buy and is it steamed? The salted fish is not crispy, it’s soft and yummy so I’m assuming it’s steamed? Can you tell me which type to get? Normally I buy salted kurau flesh and fry it but I really like the steamed version. Would appreciate your expert advise 😆 Thank you

      I am not expert in salted fish but yes, usually the ones used in claypot rice is steamed type, the soft type

    Hi Ah Pa, do you soak the lap cheong in hot water first? Or just fry it straightaway?

      If u want to remove the skin, then soak it under room temperature for 1-2 minutes, then use a scissors to remove the skin. If not can fry straight away

    hi Ah Pa..i thought sesame oil must always put after cooking? because it gets bitter if heated up too much? that was what written on the bottle i bought 😅

      U cannot cook sesame oil by itself for too long, it will turns bitter. But it’s ok once u added into other ingredients.
