💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. My dad would buy ribbon candy every Christmas from Scholers candy store in our Philly neighborhood. At Easter we got vanilla buttercream dark chocolate eggs in our baskets with our names on them. Soooo good!

I'm just pointing out that it would be easier to weigh the items before putting then in the bag so you're not doing double work by taking it out and finding the correct piece and then taking it out and doing it over and over. Time is of the essence in a very crazy and challenging business. I give this company a 10!

Question..why can’t you pour the corn syrup into the kettle rather than the grabbing and balling up handfuls? Must be a reason yes…
Suggestion..17:40 it may be easier to weigh out the batches into bag weight first then bag them up rather than pulling the product in and out of a bag on the scale
Corn syrup is way too thick to do that, it would take hours haha

As an aside, how much of the ingredients are lost during the candy-making process? Based on the beginning of this video I’m guessing this batch started around 25 pounds total, but how many did it end with? Is there ever any “extra” left over?
Also, how long does the cooling process take after a finished piece is set aside? Moreover, how long is this entire process from start to finish?
It only takes a couple minutes to cool, and it's a 24 lb batch and we pretty much get that in the output of the candy.
@@HerculesCandyASMR does the boiling corn syrup easily escape through the fume hood or is the vapor perhaps too heavy and mostly precipates back into the kettle? how much of the vapor we see is water vs syrup? Like if you were to leave it on the heat too long how quickly would it reduce?
Tryed it once and never again!!! Stuck my bloody finger in it; to test if it was done. I was about 12'1/2 or 13 years old at the time. Got my beat , for not finishing it. My poor mother was so sorry for not finishing it; and serving to the relative's - but she had a good sniveling session and boo hoo pity party. Years later my Grandma told my mom; that everyone new what happened and they busted a gut laughing at her. She screamed at me over the phone for about 5 minutes before hanging up. I buy all my hard candy and enjoy with gusto . Keep up the good work Guys.

I’ve never made candy professionally, but I’ve always guessed the hammer tapping creates vibrations that make it easier to remove the candy from the hook without it sticking.

Wear leather gloves under the latex gloves gloves, so they’re not too hot.
