Made this yesterday, followed recipe fully with the exception of using gluten free flour (don’t use A/P) and adding some fresh thyme. I had 4 chicken breasts (18 medallions),
used the two cups stock as per recipe……it was much to much stock, even for the quantity of chicken. I wound up adding some arrowroot starch mixed with water to pan. Thickened the sauce nicely. Did it ruin the flavour of the sauce, I don’t believe so. It was so very delicious! Served it with a side of Moroccan couscous (pearl couscous with green lentils). Can’t wait to make again with perhaps 1 cup of stock. Very, very good!
Easy to make. I used bowtie pasta and a ceasar salad with a bottle of wine. Perfect dinner.

YUM ! Love this video, learned some tricks, and you are a wonderful chef who cooks from his heart. The one thing i have to change is to substitute capers for the peas (I am not a pea fan LOL !), so my rendition shall become chicken scallopini-picata :0) no lemon tho, and an extra splash of vine too.
