    SUMAC RED ONIONS:
    1/2 red onion, peeled and sliced to 1/4" slices (about 6mm) wide
    2 teaspoonfuls (approximately 22 grams) of dried sumac
    4 teaspoonfuls (20ml) of apple cider vinegar
    Peel and slice red onion. Cut whole onion in half, peel, then slice into 1/4 inch slides (6mm) wide. In the bottom of a clean and dried pint glass jar, ad sumac and vinegar. Place onions in the jar, cover with jar top, and shake. Will be ready to use in 30 minutes or store in the refrigerator.
    CAJUN PICKLED ONIONS:
    1 pound (about 454 grams) whole, fresh pearl, white, or yellow onions, peeled.
    1/2 gallon (2 liters) of water to soak onions
    2-3 bay leaves, dried, divided amongst jars
    2-3 fresh basil leaves (or 1 teaspoonful of dried basil), divided amongst jars
    2 teaspoonfuls (approximately 22 grams) crush red pepper, divided amongst jars
    16 ounces (473 ml) plain white vinegar
    5 ounces (148 ml) water
    1 Tablespoonful (15 ml) liquid crab & shrimp boil concentrate
    Peel onions. Slice 'pole to pole' in half, leaving root end holding slices together. Slice each half onion into 2 to 3 slices, approximately 1/2 to 3/4-inch wide, leaving root intact. Soak in 1/2 gallon of water in glass or plastic bowl 8 hours or overnight. Pour off soaking liquid next day.
    In 2 to 3 clean pint or quart jars, place a bay leaf, a basil leaf (or dried basil), and 1/2 to 1 teaspoon of crushed red pepper flakes to each jar. Tightly pack onions into jars, trying to keep root intact and slice whole.
    Mix vinegar, 5 ounces of water, and liquid shrimp and crab boil. Pour over onions in jars, leaving about half an inch of space at the top of the jar. Cover with jar lids, and store in the refrigerator for 1 week before using.
