The beta of Super Mario Sunshine on the whole fascinates me. There's so much that disappeared, from Tramplin' Stu, the human tourists, a Deflino Express transport system, a very early Delfino Plaza and so much more. I hope a prototype build resurfaces one day.
This cut content is certainly interesting. Fun fact: I once beat the final boss in Super Mario 64 DS without unlocking Luigi or Wario. I didn't find Luigi's painting before then.
Man, Luigi will make it his number one goal to save his brother from paintings, multiple times nonetheless, but Mario will only ever treat it as an optional objective if it was the other way around.
I like The Fire Chestnut in Super Mario Sunshine (2002), Isle Delfino from Super Mario Odyssey (2017) and Missing Brother in Super Mario 64 (1996).

Starman Fortress is an interesting piece of cut content in Super Mario Galaxy. It was the first planet that was designed when creating the game and it was supposed to be bigger than anything that actually appeared in the game. There's tons of concept art for it online and I believe there's a model of it in the game's files.
Imagine if Odyssey did have dlc locations:

Sarasaland
Yoshis Island
I think the Skeleton Power Up for Super Mario Galaxy 2 got Rejected because that Death Animation where Mario becomes a Skeleton after dying to electricity was already too brutal for him
There are unused cameos of Samus,Link,Wario,Fox,Olimar and Pikmin and Excite Bike in Mario and Luigi superstar saga and unused enemy behavior in Mario and Luigi Bowser's inside story.
Honestly, I would absolutely love to see a mod of NSMBWii that allows you to play as Chicken Mario. My one condition is that the Penguin Suit must remain intact.

Peach being playable in New Super Mario Bros. Wii would've been much better than just having two nameless Toads as the third and fourth playable characters.
I kinda wish people would stop saying that Mario is older than Luigi, bcuz theyre actually twins...but yes Mario may be older by a few seconds or minutes. I think we see that in Yoshi's Island lol

wish the cameos in galaxy 2 happened as nintendo should have more crossovers outside super smash bros. and odyssey really should've had dlc of other kingdoms/previous mario locales.
find it interesting world was going to include more from mario 3 & princess peach should be playable in 2d mario as it would've been a better option than peachette(outside memes wasn't really a reason to make her outside an excuse to keep peach out/miyamoto also denied wario forgetting the 2d land games thinking only his flanderized farting was all their was.)/really wish daisy was playable in 3d world as deluxe feels like a new character should've been included.(guess mario maker 2/new u is why toadette didn't get included.)
