- Hey everyone! I was reading the comments and saw so many people asking for an Eggplant Parm recipe so I had to do it! For this recipe, my friend from @dancingwiththestars @Heididamelio came to cook with me. I had so much fun making this with her. There's nothing better than cooking with your friends and family in the kitchen!

Ingredients-
Two Eggplants
I teaspoon salt
¼ teaspoon freshly ground black pepper
½ cup all-purpose flour
3 large eggs
I cup dry Italian-seasoned breadcrumbs
½ cup extra-virgin olive oil, plus more for the dish
3 ½ cups Homemade Tomato Sauce • Italian Sauce Recipe |...
2 cups (8 ounces) shredded fresh mozzarella cheese
½ cup (2 ounces) freshly grated Parmigiano-Reggiano cheese
2 tablespoons chopped fresh Italian parsley for garnish

I love you, you are the sweetest person and have great recipes. I know your beautiful daughters and friends mean everything to you, but I love you.
