About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on CZcams.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. That's a humane way to cook eel. Here in the Netherlands they let eels swimming in fresh water for 3 days. After that, they put them in a jar of salt so the slime will solve. After 24 hours in salt (very painful for the eels) the most of them are still alive and fighting. They put them on a skewer and smoke them. Most of that eels are smoked alive. So this isn't extremely graphic. This is the right way.
How do the eel stay alive in salt for 24h? Don't they need to breath?

Its like the frog and the salt
I believe this is an asian swamp eel, Monopterus albus, known as belut sawah in my country, Malaysia. It's a freshwater eel. It's mostly caught around the edges of rice paddy fields and swamps where they lie in holes, waiting for a passing frog, bug or fish. I think this is the first time I've seen it prepared by a Japanese chef. Very surprised to see this fish so far from it's original habitat, plus we don't even bother to fillet this fish, lol. We mostly make it into soups or deep fry.
p.s. The blood of this fish isn't poisonous, but it does harbour a kind of blood flagellate parasite, so bleeding is still advised.
p.s.s. handling tip, put the live eels in ice water before killing, they become lethargic and easier to manage when killing.

as a malaysian an currently getting a diploma in culinary. yes, i can assure u its the same kind of eel.. and in my class we dont bother with the teknik used by the chef. we just cut the head clean off and chop them into smaller bits. malaysian tends to use them in soup.. grilling or frying them is a rare occasion...

Bottom line on pain: when you hit your finger with a hammer, you actually "sense" and "feel" the pain in your brain.
Here is the sequence:
1. Hammer hits finger
2. Nerves in the finger feel the sensation, and those nerves send the signal to your spine
3. The spine sends that signal up to a Pain reception segment in your brain.
4. That part of your brain tells you "Damn, that hurts" and you react both verbally and physically.
5. All of this sequence happens in less than 1/100th of a second.
If the connection between your finger, and your brain, is broken at any point along the way, your brain will not feel the pain, and you will not react.
This is the reason why a person paralyzed from waist down cannot feel it if you smash his toes.
Think of it as having multiple extension cords plugged together. At one end, you have the electrical socket. The other end you have your lights. If you unplug any of the connections between any of the cords, the lights go off.
Thus, with the eel, the instant you sever it's spine, it cannot feel anything below that point in it's body.

I guess most people nowadays are disconnected with the fact that for every piece of meat they eat, an animal had to give its life. And I know that eels especially aren't easy to kill (smoked eel is very delicious, too). Keep up the good work.
That they are. People dont realize that the vast majority of animal on animal kills are quite brutal and painful. Theres videos of animals being ripped up while alive and being eaten before they even die.

The eels died after they had their vertebrae severed. The only reason they still move is due to muscle contractions, and having their nerves activated by the salt that seeped into the open wound.

There is still a source of energy for the muscles in the form of unused ATP molecules stored in the cells. All that the muscles need is something to activate them and they can still contract and relax (until they run out of ATP or something else shuts down the biochemical machinery).
So salt is just forcing the unused ATP from the stored cells. I don't think it has anything to do with electron affinity. But, I could be very wrong. I am by no means an expert.

It's a combination of electron potential and stored energy. I say both because muscle contractions cannot occur without energy, and ATP synthase (which gives energy that can be used for muscle contractions) cannot work without an electron potential. So that makes you both right. :)

It's not only an excuse budgeters use to cut costs by torturing their food servers not the food preparation staff but also a scapegoat to take more money if your using a credit card to tip (if your inclined to tip use cash, your waiter/ess will have the whole amount) when both jobs are extremely strenuous. I only tip so the waiters that SHOULD be paid minimum wage (no tipping needed) don't spit in my food or being put on the back burner on my next visit. Saying that it's mandatory is a gross understatement for "fear of future treatment". It's not a customer's fault the food industry calls their servers "a dime a dozen". I said this because eel is served everywhere.
