he’s VERY good at staying in character, one of the best i’ve seen really. if you listen to him on the adam buxton podcast you can hear the real him, which is very bubbly and giggly actually. he seems a genuinely lovely guy

If you know anything about psychology, James is amazing material. He is so confident that he can transform it into being awkward. He isn't that shrunk down but pins his arms to his sides, says outrageous things, won't allow himself to be interrupted, ect. He could be material for an entire year of psych lessons
Except that's not the person, but the persona he inhabits on stage.

Found out on James Acasters podcast that when he spoke to Tom kerridge the chocolate was actually used in the chili, just not the bolagnase. The more you know.

Chocolate makes a chilli. And frankly, I've found that lime juice does too. You won't find that in any recipe, I just tried it once trying to figure out what was missing. Frankly, citrus is a missing ingrediant in many dishes and makes the difference between good food and great. I hope this helps even one person.

@@DeathnoteBB plenty of white, cis, male etc people struggle to build any confidence because most people don't judge you on those basis as much as they judge your sense of humour/comedic timing and your appearance/attractiveness.
Especially for a guy, the two traits I mentioned earlier are the primary basis for determining confidence imo.

I do that, too. The cocoa powder I add really brings out a lot of other flavours and makes it taste a lot richer and doesn't make it taste chocolaty... so I can see why the OG does it
I've put dark chocolate in chilli a couple of times, that's definitely a thing, I can see it making sense in spaghetti bolognese too.

The thing is James was right about adding cocoa to bolognese. There are recipes that advise it, just not the BBC's one clearly.
He wasn't wrong about "chocolate" in spaghetti bolognese, it just wasnt in the specific recipe they were looking for. I just looked it up because its such a weird ingredient that maybe it could be true.
I found a site that read adding cocoa powder to bolognese during the cooking process ads sweetness to take the edge off the tomatoes, and the chocolate flavour really adds to the rich beef juices from the mince. And I found a couple recipes with chocolate/cocoa powder
Cream or milk does the same thing to the acid in the tomatoes to an authentic bolognese
Or, and this does work, somehow...
Peel a couple of carrots and drop them in unchopped. They absorb the acid from the tomatoes, while adding their carroty sweetness.
Then just remove them once cooked, and you've got a killer bolognese or chilli sauce that's suitable for your lactose-intolerant friends.

Oh my god so this is the episode I saw a few weeks ago. I was just wandering downstairs to get food and glanced at the tv and saw everyone just sitting down and was so confused 😹😹

I was given ghost chili sauce on a toothpick to taste one time without warning and the only thing that made the Heat go away instantly was eating chocolate! I was totally surprised
