Three Cheese Cajun Chicken Recipe

Bone/Skinless Chicken Thighs - 4-6
Olive Oil
Butter, Unsalted - 4 Tbsp
Garlic Cloves, Minced - 3-4
Chicken Broth (or dry white wine) - 1/4 Cup
Heavy Whipping Cream - 1 Cup
Parmesan Cheese - 1/2 Cup
Sharp Cheddar Cheese - 1/2 Cup
Gouda Cheese - 1/2 Cup
Lemon - Half
Parsley, Finely Chopped - Handful (optional)
Seasonings
Chili Powder - 2 Tbsp
Paprika - 2 Tbsp
Italian Seasoning - 1 Tbsp
Onion Powder - 1 1/2 Tbsp
Salt - 1/2 Tbsp
Garlic Powder - 1/2 Tbsp
Cayenne Pepper - 1/2 Tbsp
Red Chili Flakes - 1/2 Tbsp
Save for later (don’t add to above)
Black Pepper - 1/4 Tbsp
Let’s Cook:
In a bowl, mix chicken, olive oil, and 2/3 of spices, but not black pepper
In a pan on med-high heat, add 2 tbsp butter and a little olive oil
Cook chicken, roughly 6-7 minutes each side
Remove chicken from pan and set aside
Add garlic to the pan for a minute or so
Deglaze pan with chicken broth, scrapping fond (caramelized bits) off of pan
Sauce/Finishing:
Add other 2 tbsp of butter to pan, add last bit of seasonings and stir
Add in heavy whipping cream and cheeses, stir
Add in black pepper and juice of half lemon
Let sauce thicken while stirring
Add chicken into sauce
Serve with fresh chopped parsley (optional)
