Take what I'm about to say and do some testing before you try full scale.
I used to work for a company that cleaned brick following the stone mansions in new construction. We used muriatic acid (pool cleaner) and scrubbed the brick.
DO NOT USE IT STRAIGHT AND DO NOT LEAVE IT ON. FLOOD THE WALL WITH WATER AFTER YOU SCRUB AND APPLY.
The acid dissolves the white film left behind from the sloppy mortar. It works by breaking the cement down and leaves the sand. If you do not rinse enough the mortar will turn to sand.
A 3 foot handle scrub brush, rubber gloves, respirator, and a pressure washer with a diluted 5 gallon bucket of water/acid solution will work wonders. You can even use a pump sprayer to apply. Just make sure you experiment because the age of your building and differences in mortar across the country I can't give exact amounts.
Also be mindful of the floor. I would even wet the floor before starting. Remember water water water. Hope this helps

those IBC totes make a good man basket if you take out the container. She must be a farm girl to work that hard along side of you. I have a gal just like that, lucky us. Keep the faith & stay at it
