    I have to say that this is simply THE BEST pizza crust. All the other homemade ones I've tried are the kind where you have to spread a paste (that's the "dough") onto parchment paper, then parbake it. This crust is basically NORMAL take-out pizza crust! I roll it out, load up the toppings, and load it in the oven! SO GOOD! Thank you!
    Also, I have to triple your recipe to feed my family because each of my kids could eat a whole 10" to themselves. 🤣 So I make them even bigger.

    Thank you so much for your recipe!!! I am vegetarian because of my religion (I can eat dairy products and honey) I have just found that I have celiac disease and I 'm allergic to chickpeas. It was very tough because I couldn't eat anything and most gluten free flours are made of chickpea and amaranth (I am also allergic to amaranth) thank you so much for your recipes. Thank God I have a very supporting family, my fiance has no gluten intolerance or allergies but he has become vegetarian and is now on a gluten-free diet. I have told him he doesn't have to do this but he is really wonderful ❤❤. I'll try your pizza and I hope he likes it. Blessings!

    I made this! It was awesome. Maybe this will help someone intimidated by making the flour blend or baking in general:
    Instead of making Kim's bread flour blend, I picked a flour that already had most of the same ingredients (Bob's Red Mill) and added the appropriate amount of whey protein isolate to it for this recipe (40grams to 380gram flour = 3 cups flour).
    I also was impatient and only refrigerated the dough for about 4 hours and I don't have a pizza peel so I just put the dough on an oiled pizza pan.
    I'm sure following her directions properly would be even better and I intend to eventually. But y'all, it was still miles better than any gf pizza I've had before. My gluten eating husband said it was good and that the texture was normal. So glad I found this channel!

      @@myriamd5691 I used the 1 to 1 baking flour. I just made it again the other night and I tried putting the dough ball on the oiled pan and then spreading it but that was difficult. Rolling it out first, then putting on the pan (what I did the first time) is much easier.

    Found this video and instantly subscribed! Adding whey protein powder to the flour blend is GENIUS! After all, gluten is a protein, so if we can’t have that specific protein let’s just replace it with another! The dough is currently chilling in my fridge. Cannot wait to try it!

    Tried it and I will definitely make again. I think it was a bit on the yeasty tasting side, but that has happened to me with other recipes so idk what that’s about.
    I just wish it had called for more salt to give it a bit more flavor.
    Absolutely loved that it has an excellent chew, and it’s fun to make and that you explained how to freeze some! Such a good freezer meal!

    Hi! Just wanted to let you know I made the bread flour and substituted hemp (max fiber) instead of the whey. When making this dough WITHOUT the husks and dropping the water down the the 1&1/2 cup-to reach the same consistency you did it took 1/2 cup more water. Proofed amazing and I’ll bake it tomorrow! THANK YOU!

    I made your recipe for the NY pizza. It was awesome, I made a red one for the hubby, with onion pepper pepperoni. I had a white one. Riccotta, mozzarella, Parmigiano fried garlic w spinach. It was magnificent. Thank you for sharing all of your recipes. And you teach us. God bless you.

    Might give this a shot 1 day, I've been using Caputo gf flour for my gf pizzas, and you can barely taste the difference, it always turns out almost exactly like normal pizza.

Besides being a terrible dough roller- this turned out DELICIOUS!! even my fiance was so impressed by how great this tasted he gave it a 10/10!! It def did not have that same gf texture and taste you find everywhere else and it was nice to actually have a gf pizza that also had a nice crust. THANK YOU SO MUCH FOR WHAT YOU DO I can't wait to make the pizza again and try out your other recipes!!!! OMG you're amazing

      That's wonderful!!! I hope it works for you. Unfortunately, the only 2 components I buy in bulk are the rice flour and potato flour. The rice flour I get is the authentic foods brand in 50 lb bags. Here is the link to that: amzn.to/3PJerZ1 As far as the potato starch, I buy a 40 lb bag at my local restaurant depot, but you have to have a business license to shop there.

    You mentioned the rest of the dough would last 10 days in the fridge, can it also be frozen? Maybe into pre measured dough balls that I can take out n warm up to work with?

      Yes, you can freeze the dough! Just wrap it individually (I like to spray my plastic wrap with a little nonstick spray and then wrap it in that). Then I put the dough balls in a large ziptop bag. When defrosting, I leave the dough in the plastic wrap on the counter until it thaws, and then remove it from the plastic wrap, shape it, top it, and bake it 😍

    Hi, Kim! I made this and it truly is delicious. It even smells like "real" pizza dough. I made another batch yesterday and as I got my bowl ready for the fridge after rising for 2 hours, I thought: What happens if I make a pizza without letting the dough sit overnight in the fridge? Sometimes a girl just doesn't want to wait for her pizza! Thank you!

      It will still work, but will most likely be really hard to shape because of the stickiness. You could try to put the dough in the freezer for a half hour to see if that will help with the stickiness. 😋

    I join with all for the kudos! Your dedication to the search is a blessing for the rest of us. I too have been searching for a long time for a flour blend for bread and pizza but don't have the knowledge of the science.. I used your dough recipe for the Artisan bread and it came out beautifully and delicious! Questions...In making pizza for multiple people, 1. Can the dough be balled (portioned) ahead and stored in fridge that way? and 2. can I roll out the doughs a little earlier so that they are ready to load instead of just when ready to bake? Would they need to be stored in the fridge after rolling out? Thank you for all you do!

      1) Yes, the dough can be portioned out and pre-shaped ahead of time and stored in the fridge if you'd like. 2) Yes! This is my favorite way to make pizza for my family because I like the dough to come to room temp before loading pizzas into the oven. Plus, it allows a little more puffiness to the crusts. I roll mine onto parchment circles when I pre-roll them. Then I cover them with plastic wrap or a towel and leave them sit on the counter for 30 minutes to an hour.

    Hi Kim, great recipe. I tried the bread with the hemp protein. Although it had a good taste I found it too green and a little too much dense. It was still better than what I find in the store. I finally found the whey protein and I am trying it today. Question, once you let it rest in the fridge overnight do you need to let it rise again? Thank you again.

    Hey Kim, excited to try this for my fam who is GF. Question, it still seems real sticky after the refrigerator. Any tips to help with that? I notice you keep adding flour to the dough but how much is "too much" to add? the stick doesnt seem to stop. Thanks for your help, love the recipes!

      It is a naturally sticky dough and I continue to add flour throughout the shaping. You can also put the dough in the freezer for 10-15 minutes while working with it, which will make it easier to work with and less sticky for a few minutes while you're shaping it.

    I was just looking at Kim's Amazon shop for the pizza steel & it says out of stock. If you click on "posts" on the storefront for the Amazon seller, it looks like the seller has posted a comparable item or they've just changed their name? I just ordered a coated stone pizza pan & have a cast iron pizza pan I've never used, so looks like I'll try those first. LOL

    you mentioned in the flour recipe to use fine or super fine white rice flour. I'm trying to find fine organic rice flour, but without success. What happens if the rice flour is not super fine?

      There is no milk in this recipe. There is whey protein if that's what you're talking about, and there are plenty of substitution suggestions within the recipe for the flour blend.

      Thanks so much! Yep, that is correct. It's a protein powder that can be used as a workout supplement, but is actually great in replacing the gluten in my gf flour blend.

      It really does work better with a mixer, but if you at least have a handheld mixer, that will work. Without a mixer, you could try a Danish dough whisk.

      I haven't tried it at a lower temp, but I do state in the video and recipe that you can use an overturned baking sheet if you don't have a pizza steel or stone.

      It can, but I find it a little harder to work with when it's larger, especially if your pizza peel (paddle) isn't large enough. I have 14-inch round pieces of parchment that I bought on Amazon that I will use if I'm making a larger pizza.

      Yes, you can! You can wrap it in lightly oiled plastic wrap and place it in a container or ziptop bag and freeze for a few months. You can also roll out pizza crusts and freeze those as well.

      I haven't tried it yet (I want an Ooni so bad, but haven't been able to afford it yet). Check the comments section of the recipe because I feel like someone told me they did it in their pizza oven and it worked great!

      I haven’t tried my Ooni yet but I did try it just on my pizza stone in the oven and it got bubbles! I was so excited to see a gluten free crust puff up like that. I was always so jealous with the regular pizza people made in our ooni.

      The dough is essentially dairy free if you sub the whey protein isolate with another one of the dairy free alternatives I have listed on my flour blends page. Of note, whey protein isolate (it has to be isolate, not concentrate) is lactose free if that's the only reason you're needing dairy free.

    I love Kim's dough recipe, but man, it's getting hard to find a few things. That, and it's at least 50 bucks for all the ingredients. Even at home making gluten free anything is expensive.

      I totally agree with you, Joseph! I've had problems getting a few components myself, even at my local Restaurant Depot. I'm hoping to one day be able to sell my flour blends premade, so hopefully it will help everyone 🥰
