From a Filipino: DO IT! What's the worst that could happen? Taste new ingredients and if you're not sure about the taste, then just add a little of it at a time. It's ok if it's not "authentic," you're trying something new and ultimately what matters is that it tastes good to YOU!
I'm just happy I started buying eggplant recently. Now I actually have everything for this recipe in my pantry/fridge. I have a new container of gochujang paste I've been holding onto for a month waiting for a recipe to use it on.
Eggplant is so under used. I had only tried Italian type until a few years ago. I picked up some beautiful Asian eggplant and oh my cut into sticks and dusted with some starch(corn or tapioca or potato) then dipped in tempura batter and fried. Its better than French fries! Or ive roasted it over a fire or in oven with onion and sweet bell pepper and puree with chickpeas and tahini and it makes a baba ganoush hummus hybrid that is great on salads or chips or sandwiches. Sorry I like to eat and cook lol I get carried away

I roast about 2 long purple Asian eggplants either in oven or over fire in back yard(or flame grill) with 2 sweet peppers and 2 nice sweet onions and a whole big head of garlic roasted. Once roasted and peeled and chopped or pureed your choice of chunky, I add either tahini and lemon juice or even toasted sesame oil and lemon I was out of tahini once. Thats the base. Now you can add good Greek yogurt drained(I bet good silken tofu would work too) and olive oil for baba ganoush. Or take the base mix above and add to ground cooked chickpeas(or white beans cuz chickpeas hate me lol) more olive oil and lemon too. Its all good together. And with grilled chicken and pita bread and grilled veggies. If you leave out the oil and tahini and lemon you can freeze base part easily for about 6 months. I add all oils and lemon after thawing and mixing. You can also add hot pepper too. I just can't eat it

I like to mix gochujang with honey and apple cider vinegar, sometimes I add in soy sauce and Sesame oil. It’s sooo good with the vinegar as it makes the flavors pop so much more.

It has a really delicious and unique flavor. It is spicy so as long as you’re okay with that, you’ll probably love it.
The most wonderful part of Korean dishes is how thoughtful they're arranged, and the saddest part is that they need to be tossed or mixed before eating... Someone told me that is a lesson on how beauty is fleeting 😮
