Made this last night for dinner. I needed to clean out the veggie drawer. It was really good with herbs from the garden like basil and oregano. A pound of this has much less volume than a big ass salad, but it still hit the spot. I paired it with black beans and quinoa. I've always been a whole foods vegan, so I eat well, but I have to say, I am so full of energy, I'm impressed with this plan.

I must admit, I was sitting here yelling NOOOO LULU STOP, IT IS TOO FULL! I too was trying a self recipe and decided to use my new Instant Pot. I did read "don't go above the line" but of course I thought What could happen? Well, a lot can happen! I had Spicy Tomato Sauce under my cabinets, on my counter, ........on the floor. Needless to say, I stopped thinking I knew better when I used the Instant Pot again. lol 🌷 I wasn't going to waste an hour cleaning up Sauce again! lol I have trouble eating the same thing more than once, like I was born with a silver spoon in my mouth or something ! I am always amazed that you can do this. My friend how many times did I offer to make a soup or stew for you???? A Dozen??? You said I don't need my vegetables swimming" LOL So not that is going to be disaster but oil is essential to get the best flavor out of the onions caramelize them and the peppers add the garlic after them. It will make your broth, Not water, much more flavorful. shrooms go in last they cook the fastest. Chop the carrots!!! LOL I like kale in mine also. Don't worry I'm still coming over for some I'll bring my own spoon.

An easy way to peel and chop garlic is to place the cloves in the microwave for about 15 seconds. The peel comes right off and it’s so much easier to chop. 👍

Some of the ingredients remind me of a weight watchers chili. I took their recipe and bumped up the veggies and beans. I make a giant pot and freeze it for when I don’t feel like cooking. I always have something healthy in the freezer to back me up.

Maybe you’ve heard , but if you wash veggies in a bowl with just a tsp or two of baking soda it removes most sprays on the outside . Very economical too . 🌿😊 bless you Lulu !

Hi, Lulu, you’re on the way to the tapping flow… I remember so well, when we tried to catch up a piece of A CHORUS LINE and our dance teacher FINALLY put on the music, first in a slower tempo,, and ONE DAY in the original tempo…. we all felt a bit like babies: wanted to run, but couldn’t . I even had to take care of my back: all these hard steps were no problem in the dancing school with a special 'swing' floor, but at home the floor was firm. So take care and stretch and relax in between… I like to watch your progress! This stew is right after my taste for 'delish' food, hmmm😋. I never put away the veggie water, like to drink it with a sprinkle of salt like broth or do it your way with a blender and a scoop of veggies. I even have a tiny 'travel blender', which serves me well. I admire, how exact you are weighing the ounces. And how easy you can resist the starches, like the blueberry muffins. I like them too much and miss them, especially on 'difficult days'. There is a reason, it’s called comfort food, but in the long term, it ‘doesn’t serve me well'. The sticker collage is too funny 😊 and maybe you could buy a 6 quart instant pot to keep in your socks and bricks home, leaving the 3 quart in your van home 😊. I bought a 6 quart at Walmart before Xmas for $50, so inexpensive and it’s instant pot make. Then you would have a larger one to use at home. Just sayin 😅

I got behind on my practice after I hurt my knee, got busy with other things. I plan to get back to it soon!! I hired him and paid him a lot of money to choreograph a dance to my song. once I get it done and learn the whole dance, perhaps I will share it.

Ah! This answers many questions!! So if you wanted a bean or chick peas, you have to have them separately and can’t cook them together with the vegs?? Not possible to do that and be able to measure it ? (brain dead when it comes to math here) honestly really struggling because I just don’t like all the separate things.
correct!! I can add oil or beans or chunks of cooked potato, but for me, everything is prepared separately and assembled together to serve it!! works out great for me!! to precisely portion my food, portion control at it's finest!!

Lulu what size is your tap practice board? I got my tap shoes out and I'm not terribly bad but man my hips are talking to me today 😅. But I can't use my floors I'm afraid I will harm them b/c they are ceramic tile and concrete may harm my shoes. 😂
oh yes, do not tap on ceramic tile. I just have a 1/2" piece of plywood and this piece happens to be about 2' x 4'. I would prefer 4' x 6' and may get to that project one day. all I did was get peel & stick vinyl flooring squares and cover the wood. careful on the vinyl that you choose, some are slippery. make sure it's not really smooth hard vinyl, get the ones that are bendable so you know that have some give to them. I just got them at Lowes. very inexpensive.

Let me ask you something lulu, isn't 1/2oz. Of oil A lot of calories. It's got to be a tablespoon or more because you drizzle for a while. Have you ever compared weight to a tablespoon? A tablespoon of oil is a 100 to 120 calories!

Muir Glen uses citric acid in many of their products so make sure you check ingredients closely.......citric acid is not good! Also, always eat fruit when it's ripe so the green pepper you are using is unripe fruit and is a no no.
