    Welcome to Modern Homestead Alaska. We are located in South Central Alaska near the town of Wasilla. Living in Alaska and building our dream of “modern Homesteading” through the wilds of winter and the long summer days. We started building our Modern Homestead in 2021. We have since completed the upper levels of our home. Built a 16x16 foot chicken coop that dreams are made of. Our chicken ladies live in luxury as they view the beautiful lake from large windows inside the beautiful coop. We raise our own poultry, hunt for our food. We are avid fisherman And woman. We also built an amazing and beautiful wood shed. We have great big garden planes for the future. Join us as we dream big dreams and live everyday working hard to accomplish them.

    Wonderful recipes. Look forward to trying them. Happy birthday Kodie Ann. I'm grateful that my husband is able to go to work everyday even though he has 3 types of cancer. With his strong will and a lot of prayers he is beating cancer and takes maintenance does of chemo to keep it from returning.

    I make a bean soup with Northern Beans or Navy beans, I prefer using a ham hock (not smoked) I add onion, carrots, celery, salt, pepper, & I like a little hint of tomato sauce or juice in my soup. I like the color too.

    Watching you cook is very relaxing! FYI, if you don’t want to constantly stir the polenta you can put it in the oven and just stir it a couple of times through the cooking.

    Bread can be a fickle thing, I had to fly up north to a goldmine camp in the Yukon that my parents work in, dad was the safety inspector and gas fitter and mom had the contract for cooking and cleaning the bunk houses, well she had some major health issues so I took over so she wouldn’t lose her contract. She always made all her own breads and buns and I never had, we’ll let me tell you, my ten loaves of bread turned out like BRICKS! I swore I would never make bread again but mom ordered me to do it again and because she was my boss I had to comply and I have no idea what I did but omg it turned out so beautiful!!! I was so proud of myself and grateful that my mother made me do it! I then started to bake my own hotdog and hamburger buns, English muffins, and French bread, I would bake ten loaves every 2 or 3 days, those men could eat like crazy!!! But I found that the humidity, altitude and your frame of mind all play a factor in good bread making. I love baking bread now and omg the aroma in the house is heavenly! Sorry for the long story

      I totally agree! I’m honestly good at breads. And some times it goes and steals all my confidence! Lol I’m so happy you kept trying. It’s beautiful and homemade is so much better.

      @@modernhomesteadalaska when people come over and smell the bread baking they go on and on about how good it smells so you just know I have to send them home with a loaf in a brand new tea towel (washed) lol, in fact I bought new tea towels just for that purpose hahaha! You are so right about homemade being better then store bought and I take great pleasure in gifting my friends!

    Happy Birthday to Kodie!!! The party food spread looked wonderful! Growing up, my Mom would make Cabbage Pockets (your cabbage burgers). She never put cheese in them however. She called them Kraut Bierok. Her mother used to make them for her family growing up also. They were a real treat because it would take so long to make them. We are of German decent (Russian-Germans, there's a story there). She grew up in Western Nebraska. Her sister is the aunt I told you about several months back that lives in Wheatland, Wyoming. Now they have a fast food chain up there called Runza's. Now I am really hungry for some!! LOL! All of your dishes looked awesome. God Bless you all!

      Oh my goodness that’s wild! If we go for a visit I’ll check it out! They are so good. We have lots of Russians around here abs they make those things like what o made but with other fillings we buy them at bake sales. So yummy,

    Hi Jessica and sweet family! I always use any leftovers or freeze for later. I accidentally bought an extra leaf lettuce yesterday, so I will make kilt onions and lettuce. I can make a meal on kilt lettuce and onions, but love it with some pinto beans and cornbread.
    All your meals looked so delicious Jessica.
    Awww, Kodie’s birthday party looked beautiful and delicious. Enjoy your last year of being a teenager, don’t rush it, just enjoy.
    I thankful just to open my eyes every morning, but I know if the good Lord takes me, then I will be with my loved ones and in our Saviors presence. Have a blessed evening!

    The waste not, want not was and still is a way of life for me growing up and we taught our children this way, and now we teach our grandbabies...I make my own citrus scented cleaning vinegar with peels...or will dehydrate peels and grind for cooking, baking, etc. I will as many items from foods for many other uses. I also upcycle non-recyclable platic food containers for planting seedlings. Where there is a will to make the best use of any item, you will find a way! 😊 You make my days better! ❤

    I know I’ve commented a few times but I use to watch Swamp People and your tablescape reminds me of the crawfish broils they would have…only yours is Alaskan style or Jessica style, lol, loooove it, you go girl,,,,Happy Birthday Kodie and a big shout out to the rest of the family from Kentucky, I got my nieces watching now!!! My oldest son has a request for Aaron, he wants to see him smoke some caribou or beef, he’s a big hunter and has been hunting since he was eight and loved watching Aaron smoke the bacon, but yeah, just sometime in the future, have a blessed day guys!!!!!

    Those burgers are also called Bierocks or Runza. I love using leftover corned beef instead of burger and add Swiss cheese. Amazing!

    I love to see your kraut burgers. My grandparents were Germans from Russia. In their community kraut burgers were called bieracks. My mom used to make them and they were so good. I love them. No cheese of course and just salt and pepper in the bieracks. They are so good. She also used the bread do and put chili hamburger and beans but the cabbage and hamburger were the best.

    That’s so funny your kraut burgers we make it with the hamburger and onions and the cabbage and then I make a homemade teriyaki sauce and then we serve it over cauliflower rice. It’s called “crackslaw” online. But I think what you did was terrific! 🥰❤️🙏🏻🇨🇦 I wholly agree with you not letting your food go to waste is sooo important!!

    Funny that your doing this. As I'm in lent I've chosen this year to only eat what's in my house. I've started with I can only use what is already open before I can use anything else. My freezer is starting to look organised as I clearing it out.

    Great idea… route burger… totally making that.
    With the new flour it just react differently… I would start baking with 1/4 of the fresh mill flour and the rest what ever flour you use before… start changing in small increments until you get used to the fresh mills flours.

    Oxo scale is the one recommended by American Test Kitchen. It has a pull out screen which I didn’t think I needed but I love. So much better then my old scale. I have only been using mine for a few months but it has been amazing. Great meals pulled from the fridge, freezer and pantry. Always good to use up everything and not let things go to waste. I did some English muffins the other day and the dough was a mess. I added flour in and made it work and then turned out fine but it is a process for sure! Happy birthday 🎉 🎁 looks like a fun celebration

    I had to comment on how you peel your potatoes. I do it the exact the same way. When I see some swiping at them (and carrots) over and over again it seems so tiring. It’s funny how we all learn basic things different ways. Love the Kraut Burgers, definitely trying this recipe.

    Wow, never heard of krout burgers, I have hamburger laid out and a head of cabbage in the fridge and might as well try them. I have yellow onions so I’ll have to use that, the kids are down for whatever I put in front of them cuz it seems like they’re always hungry!! They look delicious!!     I always do a fast soak for my beans. Wash good, pour into pot cover with water and bring to a boil shut off heat and cover for one hour. Rinse and cover with water or stock add your other things and cook just like you did. I never add the salt until done too.

    I made my first "breakfast" casserole to use up stuff I had in the fridge last week and my son loved it so it will be a thing for me in the future - you can put anything in there! trying not to waste food can be a challenge! well done Jess! ❤

    Hey Jessica. What problems do you feel you’re having with your Einkorn bread? It’s a tricky wheat to use, especially if you’re used to making bread with others.
    1) it’s a sticky dough. And it will get stickier the more you work it. So it’s important not to over work it.
    2) it absorbs water differently than other wheats. Which is why it is stickier. If you treat it as normal wheat, it bakes dry.
    3) do not over proof (duh, right? No but seriously).
    4) if sucking whole wheat for all purpose einkorn, increase the liquid by like 5 percent.
    5) I recommend getting Carla Bartolucci’s cook book. It helps a great deal.
    But your bread looked like it cooked fine to me. Good luck!

      It just never did rise at all. It was a bit more tacky then last time. I have found if I let the fresh flour rest a day or so that has helped. Your message helps. Thats why I showed the whole process. Sometimes it’s the texture of slime, other times it’s so sticky i can’t hardly move it. It takes some getting use to it.

      She is upstairs. I didn’t like the animals or the poo in the kitchen. Not that it was near the counter or anything. We just had her in the kitchen to get her use to the family and so I could see her during the day. She is in the kids area now, happy little thing. She loves the kids.

    When I seen the potatoes I thought of Chorizo, eggs, potato burritos. Have you or Aaron ever made chorizo? I know Aaron likes meats and such so maybe he has. Don't need to link it (put in casings) for this application. You two have such a great relationship can't wait to see him smoking more meat again in the warmer meats :) love all the Meat Church seasonings I've got because of those videos.

      We have never made our own chorizo but we love chorizo! I know Aaron needs to get back to cooking! He is ready just waiting on the snow to move out of his way! Lol thank you so much!
