Today we're making Pasta alla Boscaiola otherwise known as Woodsman style pasta. There are many ways to make this recipe but I especially love it with rosemary. It has sausage, onions, garlic, and lots of mushrooms in a delicious cream sauce. Enjoy!

INGREDIENTS WITH GRAM AMOUNTS
1 pound (454 grams) rigatoni or penne, paccheri, etc
¼ cup (54 grams) extra virgin olive oil
¾ pound (340 grams) bulk Italian sausage
1 pound (454 grams) cremini mushrooms - sliced
1 ounce (28 grams) dried porcini mushrooms reconstituted in hot water then squeezed out and chopped
1 medium onion - diced
2 tablespoons fresh rosemary leaves - chopped
5 cloves garlic - sliced
¾ cup (170 grams) dry white wine
14 ounces (396 grams) crushed plum tomatoes
¾ cup (180 grams) heavy cream
½ cup (45 grams) Parmigiano Reggiano - grated
¼ cup flat-leaf parsley
2 cups (400 grams) reserved pasta water - will not need it all

This reminds me of the best quiche I’ve ever had. I told our server “This tastes like the forest!” They looked appalled. And I was like “No no! In the best way possible!” The next week, it was on the main menu as THE FORESTER🤣🥰

@@katherineharra8434 Yeah, a lot actually. But in a very danish way. We boil and strain our pasta and put it back in the pot with a lid on it. And then at dinner table, each person takes whatever amount of pasta they want and put sauce on top.
2 things happen. The pasta becomes clumby and the sauce is watery. Not pleasant. I dont do it anymore, and this is in large parts due to CZcams cooking videos :).
Im Danish aswell and my fav pasta dish is Cacio e pepe with 50/50 parma, pecorino no cream just the pasta water and hard cheese emulsion with the startch and some butter. Pasta is not just an Italian thing, cooking is universal and something everyone can learn if they want. This dish looks comfy and hygge , very autmn october dish with the shrooms, maybe some pancetta for more taste in terms of meats.
His videos gives a Danish feel to us danes, without even being Danish. I think its perfect!

So many channels try to attract viewers with over the top antics and strained efforts to be hilarious that just come off as cringey. I made this tonight from the written recipe, which is just a touch different from the video but close enough. I used whole plum tomatoes and crushed them by hand, that way you get bits of tomato which gives the dish a little more texture. Didn't need any pasta water - it was perfect. This recipe tasted like the pasta dishes we had traveling through the hills of Tuscany where everyone cooks with rosemary. Really wonderful!!
I made this today. It was a huge hit with my three friends. All of us have had the good fortune to spend a bit of time in Italy. I used paccheri which captured some of the sausage with each bite. I forgot to toss in the parsley I had chopped, but nobody knew it was supposed to be added. Some pepperoncini gave a nice little heat. I very much enjoy your channel.

I just made this recipe and it’s hands down one of the best pasta dishes I’ve had in a long time! Didn’t have any white wine so I substituted with Rosé. I was sceptical about the rosemary because I don’t often cook with it, but it works well with this dish

I love this channel because it keeps things simple and relatable. I visited Italy a few years ago for the first time and tried to eat and try out as much of the local flavours as I could, stuff that I’d never see at home. There were two dishes that were simply unforgettable, ravioli stuffed with pumpkin and squid-ink pasta that I had in Venice. I wish I knew how to recreate those dishes 🤤🤤
What I love most about this is how your whole family got to enjoy it with you. Seeing the smile on your face as they taste what you've put your passion into is awesome. I hope to be able to experience the same things someday.
About every 2 months we celebrate "International Day" wherein my niece cooks a big meal from a country we choose by pulling out names from a hat. Yesterday was Italian day and we (she mostly) prepared this meal as the entre. It was terrific and we loved it. Thank you so much.

If you have an Aldi near you, try their sausage patties and break 'em up to use in this dish. They're very nicely seasoned and delicious! I want to make this dish, I love mushrooms!
I’ve lost count of how many times your videos have led to delicious dinners, but man oh man this was so good! That rosemary! We found the same dried mushrooms at Costco … I can see getting a lot of use out of those. In general, being based in CT, I really appreciate your videos since I can usually find the exact products. And of course the recipes are consistently delicious and clearly explained. Much appreciated!

Your channel is the best! I grew up in Syracuse and remember good home cooked Italian food. Recipes are easy to follow. I've made about 15 of your recipes and all of them were winners!
Fantastic dish! I followed the recipe completely and it was amazing. It's hearty and it's a nice change of pace to have a weeknight go-to pasta without a red sauce. Super easy, limited ingredients, and comes together really fast. This will be in my regular rotation.
Cozy fall vibes and Sip and Feast comfort food pastas...my favorite. It's true, I've never heard of that pasta, but I love the concept. I made this for my wife for a special occasion, but I used hot Italian sausage; pecorino romano; pinot grigio; a blend of crimini, shiitake, and oyster mushrooms; and homemade pasta (kind of a cross between orecchiette and cavatelli ); served up with a really nice dry red. I'm not much on measuring things, so I generally just wing it with the relative amounts of each ingredient. We really enjoyed it! The ingredients mesh together nicely, there's no flavor that's too far out in front of the others -- in all, a wonderful dish.

America’s Test Kitchen has a great trick for cooking mushrooms in a way that they won’t soak up all the fat; you start them in a cold pan with water. The water heats them up until their cell walls break down and they release their water, then you can add fat to the pan to help sear them. Just an FYI. Been fun watching your videos.
I believe he wanted them to soak up the fat for flavor.
Love that you have your family try your dishes and don’t edit out the less than perfect reviews. It keeps it honest, what so many channels lack nowadays is they just cook the dish never add anything, never critique it. It’s just always perfect. 😂 I am making this tonight. Such a great channel. So many recipes I forgot about. Growing up in an Italian family and my uncle had a restaurant once I became an adult I kinda went my own way as a cook and moved away from my roots because it’s what I ate EVERY DAY and I got sick of it. I make more Asian food than I do Italian now and your channel is really inspiring me to go back to my roots.

You know what's great about this meal: customization and simplicity. I made something similar just with some left-overs. Use ground beef instead of sausage. I like my sauce thick so I didn't use any pasta water. Super simple that even a very mediocre cook like myself can make it!

I’ve only recently come across your channel but there are several things that I feel the need to comment on:
1. LOVE the way that you are teaching your son how to taste & appreciate food, identify ingredients & understand what he likes about what he’s eating
2. Your easygoing manner whilst demonstrating the recipes - it’s not condescending, thereby engaging with your viewers (regardless of their culinary proficiency)
3. Your obvious love of the recipes, ingredients, how food should make the eater feel, why you do certain things (e.g. adding a little salt to the veggies whilst frying, to draw out their water, to enhance their flavours) - it’s all so brilliantly engaging

I am Korean-Australian who currently lives in Japan and its surprising how few people here understand pasta besides 3-4 sauces (shoyu/soy sauce and butter, aglio e olio, bolognese and ebi cream.
I lived in a very Italian dominated area, mainly northern Tuscans so boscaiola has always been my favourite food since I was very young.

The cooking technique of mise en place, or as you put it, preparing all your ingredients in advance, took my cooking up several steps, and is the one thing I tell friends when they ask me about cooking better.
