Dill is the predominant herb used in smoked salmon in Scotland and Europe. Cold smoked salmon is the food of emperors. Kings get hot smoked but cold smoked is the real deal.
Tried the Dales with butter, garlic, onion powder and pepper on the turkey for Thanksgiving and it came out fantastic. So moist, tender and delicious. The injection was perfect for it.
I'm lucky enough to be able to fish for salmon 5 minutes from where I live, such a great tasting fish, my favorite is probably Coho (silver), it has the perfect amount of fat and very red flesh from what they feed on in the ocean. Nice video, never thought to do a quick smoke like this, around here most people do long cold smokes to make traditional dried smoked salmon, I'll have to try this out.
Hey, Jeff: One of my favorite dishes is Salmon, usually baked in the oven or fried. Certainly one of the best tasting fish, out there. I have it smoked and it is delicious, great job Jeff!! Stay Well!

Jeff try not using the liter fluid, substitute with a propane torch to get it started. Or look into Firestarters enjoy!
Another fine Pacific Northwest offering for salmon is: Garlic Salt, butter, and smoke in Alder. That's my favorite way of doing salmon.

I'm also a black pepper fan. Try using a pepper grinder to crack whole peppercorns. Fresh cracked pepper is even better than the ready made stuff.
Up here in north Minnesota we smoke a lot of fish, and use hard red maple wood. Hard to beat!!!!
You can tell a black pepper lover when you see them season something just a little bit.
