      Is this an American thing? In Sweden eating raw eggs is not generally a problem

      @@Larweigan it is. US producers wash the eggs removing the waxy outer layer which makes them susceptible to bacterial contamination. This is also why you need to keep eggs in the fridge in the US.
      That's why here in Europe you often find little downy feathers or splotches on our eggs. If you wanna see the layer, add a little vinegar to the water while boiling some eggs and then run your finger over the shell when you take the eggs out. You'll find some stuff sticking to your fingers - that's the protective layer.

      i thought part of why salmonella isn't a huge problem these days is because chickens generally need to be infected with it to spread it to their eggs, so a healthy chicken will produce salmonella-free eggs?
      i'm not casting doubt on the waxy outer layer theory, just wondering about how these theories interact ig (or if what i've heard is even true)

      @@mozarteanchaos chickens dont need to have salmonella to pass it on, a lot of healthy chickens produce eggs with salmonella, but it (usually) wont survive on/in the egg itself, so its a little bit of both i guess!

    Great video! My mom recently got an ice cream maker that she was really excited about and wanted some wacky ideas for flavors, so I showed her this. While we were watching along and enjoying the upbeat and casual vibes over our obnoxiously loud machine, she said, entirely unprompted, "You know...I hope this guy's actually happy." When I asked her to elaborate, she responded with something along the lines of, "I hope he isn't forcing an eccentric persona to overcompensate for some kind of deeply rooted mental problem." I was so caught off guard by this comment made by my immigrant mother on this simple and fun cooking video that I was left speechless while our ice cream machine's whirring resonated throughout our kitchen. We're definitely planning on trying the peanut butter and jelly flavor!

    The most frightening thing about this video is that at no point does he ever explain what "old bay" even is supposed to be. At this point I don't if that's just an americanism that someone from the US would reasonably know and I don't, or if it is instead something horrible (ground up sailors?) that is part of his cursed horror video lore.

      its like paprika and salt and stuff- it's a seasoning blend meant for crabs and stuff, but it's also amazing on a lot of stuff, like putting it on fried chicken

      It’s a spice blend. It’s famous in Maryland and the mid-Atlantic in general for being used in seafood, crabs in particular, but it’s a good seasoning on all kinds of meat. It’s also great on popcorn.

    This made me nostalgic for my time working at an ice cream factory for a west coast chain called Salt & Straw. They almost exclusively do weird flavors and they have 5 different seasonal flavors every month. Some of the more questionable things I had to do were as follows: pasteurize pigs blood, make fish sauce caramel, blend bone marrow into ice cream base, coat crickets in chocolate, pluck feather stumps out of chicken skin (with tweezers!) before roasting them, melt skittles for a pride month rainbow sherbet, make vegan cashew cheesecake swirl, infuse fennel pollen into an egg nog ice cream (had an allergic reaction to that one), make habanero marionberry jam...And the list goes on. I honestly really miss the daily chaos of that job.

      @@asiljanijara169 to each their own. I've tried bone marrow a couple of times to give it a chance and I wasn't into it.
      I'm weird about textures and think that bone marrow smells like dog food. I'm all for creativity in cooking but I think the only meat product I'm okay with in ice cream is bacon.

    One of my favorite memories as a really young child was going to my first ice cream shop with my family, my mom told me I could have whatever flavor I wanted, and (anecdotally) I said "potato ice cream!" To this day I am terrified to buy an ice cream maker because I know I would, just to sate a decades-old curiosity, create something horrible... or worse yet...

      Mashed potato ice cream:
      - Vegan coconut base from this video (or dairy base if you think the dairy industry is acceptable)
      - 1/4 cup melted margarine or butter
      - 1 mashed potato
      1/4 cup corn syrup or honey
      - 1/4 teaspoon salt

    This video inspired me and my aunt to make some weird ice cream flavors; we ended up making tamarind-chili, lavender-guava, purple sweet potato, and lychee-rose ice creams :) they were a big hit with the family, especially the tamarind-chili! Spicy ice cream is not something I thought I needed in my life but here we are

    i love that in Brian's ideal cooking show setup, he basically wants those kids who run around gathering tennis balls or the flowers etc that get thrown on ice rinks, but they just run around behind him cleaning and handing him fresh spatulas and half-cup measures

      I thought those were Chinese food take-out containers. When I get soup or noodles that’s what they come in and then I save them and reuse them. I’ve had some for, like, the past decade at least. I’m going to be honest here, at least 75% of my kitchenware is take-out containers and grocery store food containers that I thought were sturdy enough to be reused until they fall apart. I’m pretty sure I have a butter container from the 80’s somewhere around here.
      Edit: I also save takeout spoons and forks. Just thought I’d add that. lol

    Okay everyone, I made the old bay hush puppy ice cream. It was a DASHING success it's actually so good. 😭 I make a lot of homemade ice cream and know the ratios I like, so I went pretty off the recipe on the website. I did 3 egg yolks, 2 cups milk, 1 cup heavy cream (yes, swap the milk amounts, in my opinion more heavy cream just gives it too much of a fatty film in my mouth). Same amount of sugar, but I started out with the right amount of cornmeal and old bay, but then I tasted the milk mixture heating on the stove and it tasted too much like old bay, so I added more cornmeal. But then when the batter was all combined and ready to go in the fridge, it didn't have enough old bay flavor, so I added a couple more dashes of that. Moral of the story is maybe just stick to the original amounts. Or be like me and add like another tbsp of cornmeal and then another like 1/2 tsp of old bay. Just taste as you go. Don't be afraid. This is your ice cream.

    Oh! A good way to enhance the cherry flavor would be to use a little bit of almond extract! I make cherry smoothies a lot, and adding some almond extract makes it taste 10000x more like cherry! :> Anyway, I would try all of these flavors, they sound amazinggg

    We just got the same ice cream maker a month or so ago, and this video got me to start using it myself, so I thought I'd share my ice cream experience so far.
    First attempt was the PB&J but using my mom's strawberry marmalade; ice cream turned out basically rock solid but really tasty, couldn't taste the marmalade much, so basically pretty good peanut butter ice cream. Think I forgot to chill the mixture and maker's core first.
    Second was the pina colada; also turned out rock hard and bound the mixer a lot, but is indeed light and refreshing.
    Third was the toasted black sesame. Put both the mixture and the core in the fridge rather than the freezer. Best consistency so far, smooth and tasty if slightly odd, maybe even acrid like I overtoasted the seeds.
    Fourth is using pre-toasted white sesame seeds we had on hand, plus a dash of toasted sesame oil and some vanilla extract. Probably best overall so far... but tastes like peanut butter.
    So, like the movement of the mixer, my experience with making ice cream is oddly circular.

    Aight, i need Bryan to read this...
    In my town there's an ice cream place run by an absolute mad scientist who makes the weirdest flavors and combos you never thought about.
    I'll give some examples... Melon and iberic ham; mascarpone and tomato; arroz con leche (rice with milk); TOOTHPASTE, YES, FUCKING TOOTHPASTE (it was actually preatty good); Beer; Fernet with coke; olive oil; etc... But, what makes me write this with a smile on my belly... nothing surprises more than that sweet, silky, lovely avocado ice cream. It is THAT good. In fact, since he started making it, he never stopped. Flavors come and go and only a few stay on production, and the avocado is the holy patron of them. Anyhow, make it, you'll thank me.
    Ps: you should also try dulce de leche ice cream.
    Ps 2: dark chocolate, jack daniels and pecan nuts makes for an awesome ice cream.
    Ps 3: the place is called Ku Ku, and we also love it for that.

      Hush puppies are fried cornbread (with filling I think?) and old bay is kind of spicy. . .not spicy per se but it's got a tang to it, you put it on seafood and french fries. Ever been to Chickie's and Pete's or is that just in the US?

    Pro tip for dropping eggs; pour salt on it and let it sit for a while. The salt will absorb the liquid and make it easier to scoop.
