【How to Make Soy Sauce Marinated Ikura】Tasty Salmon Roe Recipe by Sushi Chef【銀座の寿司職人が教えるイクラの醤油漬け】

  • Hello everyone, welcome to another episode of Akira's Sushi At Home!
    Today's topic IKURA (イクラ) Salmon Roe A.K.A. Salmon Caviar.
    This red gem is in season from September (in recent years late August)
    to early November so we bought Sujiko (筋子) in fish market and made IKURA NO SHOYUZKE,
    Soy sauce marinated Salmon Roe.
    This is perfect as Gunkanmaki Sushi or simply to pour onto warm rice…!
    Super Easy Recipe for Autumn Harvest Ikura Rice:
    -Two Pieces of Maitake Mushroom
    -Two Slices of Salmon (Raw or Frozen, preferably fatty part)
    -30 - 40 pieces of Ginkgo Nuts
    -Approx. 300g (2GOH cups) Cooked Rice
    1. Cook Rice as you normally do with your clay pot/rice cooker

    2. Crack open Ginkgo nuts and put them on skewer
    3. Sprinkle salt lightly onto all ingredients
    4. Grill all until its completely cooked, preferably on charcoal grill (If not gas is fine too)
    5. Debone Salmon and break them into small pieces
    6. Chop Maitake into bite-size
    7. Mix Ginkgo nuts, Maitake mushroom and Salmon into rice while its hot
    8. Pour on marinated Ikura on top

    Can you use this technique for tobiko (flying fish roe) ? Will the hot water not cooked the tobiko?

      We purchased this salmon roe at fish market nearby👍In Japan sometimes they carry it in supermarket (but mainly in autumn)

    Okay now I understand why I had to pay so much for each piece of
    Ikura sushi I ate. bottom line for me was it wasn't that good, salmon sushi is still better imo
