    aww man, we had tuna today, I wished I had saw your video first! Next time I will try your method. I always overcook my tuna, it's good to see that all I need is 10-15 seconds! By the way, I am always impressed at watching chefs handle hot food with their bare hands, but watching you touching the tuna in a hot pan is a whole other level. You guys have iron fingers! (But maybe you want to put a warning for people not to try that, just in case they get burned? Just a thought.) Love everything you make! And hello to dear Haru!

      You can use any real mayonnaise. I don't remember the brand name I used in the US.
      You don't need a fancy one. The most basic kind works well.

      The knife that I use in most videos is Ikkaku Donryu Molybdenum Gyuto 210mm (8.2"). You can buy it from mtckitchen.com. This knife is good for filleting fish, slicing fish for sushi and sashimi, and cutting sushi rolls. It costs about $60 us dollars which is very reasonable for this quality knife, so the knife is really popular among sushi chefs. Plus, this knife company sharpens knives once after productions to give us clear guidelines for sharpening the knife. Please check the website. They will explain better.     Beautiful. I am in Ireland, how do I ensure the fish I buy is safe to use as Sushi as we are not traditionally used to making sushi at home?

      That's a good question. I don't know the selection of the fish sold at your local grocery stores. If you have Japanese grocery stores nearby, they must sell good sushi-grade fish. But I assume there isn't any in Ireland. In that case, buying sushi-grade fish online is the safest way. But I'm sure you can find excellent quality salmon in Ireland.

    Sorry if this has already been asked before, but would you consider Kewpie Mayo to already be a Japanese compatible mayo or a "normal" mayo that could benefit from soy and sake treatment?

      Kewpie Mayonnaise is compatible with Japanese dishes, so you don't need to add Sake and Soy Sauce. But I still add those to Kewpie Mayo to make it taste even better. It's totally up to you. But adding those to non-Japanese mayonnaise is a must. It makes a big difference.😊

      Salmon is fattier than tuna. So I think my yellowtail carpaccio recipe works better for salmon.

      USD 60!? Wow it's so expensive! I purchased this tuna from Tokyo central in Los Angeles about 2 years ago. It was about USD 15.00. I hope you can find a cheaper place. 😢

      The sakes I use for cooking are usually Yaegaaki or Shouchikubaai. Those are the cheapest kind you can find at Asian grocery stores. Those are SAKE for drinking. So they are usually located in the alcohol section. Please don't confuse them with COOKING SAKE. COOKING SAKE contains some salt in it. I don't use them in my videos. Those are located in the condiments section. So please stay away. 😊

      I think white wine works in the same way. I never tried, though. Or you can add only soy sauce. For sure, the mayonnaise becomes tastier. But, in that case, add tiny bit of soy sauce. Otherwise your mayonnaise becomes very salty.
