I love how you show your appreciation with Filipino food. Just a tip, prepare the lechon kawali in advance. Boil it in your preferred seasoning and let it rest to drain. Then once cooled down, let it sit on the ref for few hours so the fats will be absorbed. That way, when you fry it, it won't splash too much oil and bring out the crispness.

I think what he meant by the samgyupsal being boring is that the kawali added a different dimension with the crispy skin. While you need the help of the veggies to get that effect with the samgyupsal. So I don't think he's really saying one tastes better than the other, it's just that heads up bec. Kawali has different textures it makes eating the other one boring.
