Healthy Mediterranean Chicken with Cherry Tomatoes and Olives

Now, for those who don’t like anchovies. While some might be hesitant to use them, they actually contribute a lot to the dish. Let me explain! Anchovies add a subtle umami flavour, that enhances the overall taste of the chicken without making it taste fishy. Umami is often described as the savoury or meaty taste, and it’s one of the five basic tastes alongside sweet, sour, bitter, and salty. So don’t be scared to use them.
In terms of health benefits, this dish is packed with protein from the chicken breasts, which helps in muscle growth and repair. The extra virgin olive oil used in cooking is rich in monounsaturated fats, which are heart-healthy and can help reduce the risk of heart disease. After that first bite of plain chicken, you know Whiskey saw a second bite on the table, and stood there patiently, thinking, “dad, I saw two pieces, you only gave me one; I’m gonna stand here, giving you my puppy dog eyes, till I get that second morsel.”
He used to get only one piece, now it seems he has gotten used to having two. You're right, he can see there are two pieces and hangs around until then. What's next, three? 😅

I even use Anchovy in my pizza sauce because of the rich umami flavor it impars. It never makes anything taste like fish. I'd use chicken thigh meat because it's moister.

Thanks for the base recipe which I followed fairly closely, just the 2 of us now, so I only used 1 large breast and added 2 chorizo sliced and fried after the chicken; a diced shallot went in with the garlic and chilli with a few pinches of piment d’espelette for that subtle background taste, and 1cup of chicken stock simmered then thickened with a teaspoon of Arrowroot.
Served with toasted olive bread slices, the result was delicious!

@@recipe30 AAAAHHHHHHHH, Thank YOU VERY MUCH for giving me an answer. I am Saminem, in my country We have a little Salted dried Fish that is like the ansjovis. But I will never put that into my chicken. Haaahahaaaa. I eat that fish with fried precoocked cassave.
And the fish we fry it very dry. When its cooled down we make a very hot saus with garlic/ onion/ tomatoes/ sugar and then we put the fried little fishes in the saus. That fish we call it : ""Trie and Cassave.""
